Peanut & Chocolate Cookies

    It’s Cookie Friday once again and that means I got a fresh batch of cookies for you! These delicious Peanut Butter & Chocolate Cookies belong in the category “leftover baking”… happens here sometimes ;) I had a lot of peanut butter and chocolate-coated peanuts in my cabinets and since I hardly eat things like that anymore (on its own) I tend to use half-emptied packages of sweets and things like that quite often in bakes… not always knowing if a certain combination works. But most of the time it does turn out good… good enough to feed friends and relatives whenever they come over for a visit. Just kidding ;P

    There is not much that can go wrong when using peanut butter and chocolate in a bake. Especially, if you use those ingredients in cookies. The combination is really nice and delicious. If you have friends or family that is allergic to peanuts you might want to hold those cookies back and eat them all by yourself… we don’t want to harm anybody. Not even with delicious cookies ;P

    I think (besides those poor people that are allergic to nuts) most people like cookies and other stuff with peanut butter… that’s based on my experience, whenever I serve bakes with peanut butter. They normally disappear in a few seconds ;) Me personally – not the biggest fan of peanut butter in a PB&J sandwich, for example. Dunno… I definitely prefer the combination of the peanut flavor with chocolate over something sweet like jelly or jam. Peanut butter and chocolate (plus some added salt) are reaaaaally nice. If you have something like that for me, I am always happy ;)

    Easy Peanut Butter Cookies with Cocoa Nibs


    Peanut Butter Stuffed XXL Cookies

    INGREDIENTS / ZUTATEN

    (12 cookies)

    1/2 cup (120g) butter
    1/4 cup (50g) brown sugar
    1/4 cup (50g) brown sugar
    1 medium egg
    1 tsp. vanilla extract
    1.4 oz. (40g) peanut butter
    1 1/3 cups (170g) all-purpose flour
    1/2 tsp. baking powder
    1/4 tsp. salt
    3.5 oz. (100g) semi-sweet chocolate, chopped
    3.5 oz. (100g) chocolate-coated peanuts, chopped

    (12 Cookies)

    120g Butter
    100g brauner Zucker
    1 Ei (M)
    1 TL Vanille Extrakt
    40g Erdnussbutter
    170g Mehl (Type 550)
    1/2 TL Backpulver
    1/4 TL Salz
    100g Zartbitterschokolade, gehackt
    100g schokolierte Erdnüsse, gehackt

    DIRECTIONS / ZUBEREITUNG

    1. Preheat the oven to 350°F (180°C). Line a baking sheet with baking parchment and set aside. Chop the chocolate and chocolate-coated peanuts and set aside.

    2. Add the butter and brown sugar to a large bowl and mix until light and fluffy. Add the egg and vanilla extract and mix until well combined. Add the peanut butter and mix in. Mix the flour with baking powder, and salt and add to the bowl – mix until just combined. Add the chopped chocolate and chopped chocolate-coated peanuts and fold in. Use a cookie scoop to place dough portions with enough space in between on the baking sheet and bake for about 10-12 minutes or until set around the edges but still soft in the center. Take out of the oven and let cool down a bit on the baking sheet, then transfer to a wire rack and let cool down completely. Repeat with the remaining dough.

    1. Den Ofen auf 180°C (350°F) Ober-/Unterhitze vorheizen. Ein Backblech mit Backpapier auslegen und zur Seite stellen. Die Schokolade und schokolierte Erdnüsse grob hacken und zur Seite stellen.

    2. Die Butter und den braunen Zucker in eine große Schüssel geben und hell und luftig aufschlagen. Das Ei und den Vanille Extrakt dazugeben und alles gut verrühren. Die Erdnussbutter dazugeben und unterrühren. Mehl mit Backpulver und Salz vermischen und dann zur Schüssel dazugeben – nur kurz verrühren. Die gehackte Schokolade und schokolierten Erdnüsse dazugeben und unterheben. Mit einem Cookie Scoop (Eisportionierer) oder Esslöffeln Teigportionen mit genügend Abstand zueinander auf das vorbereitete Blech setzen und für etwa 10-12 Minuten backen. Die Cookies sollten am Rand fest geworden sein, sich in der Mitte aber noch etwas weich anfühlen. Aus dem Ofen holen und auf dem Blech etwas abkühlen lassen, dann auf ein Kuchengitter setzen und komplett auskühlen lassen. Mit dem restlichen Teig wiederholen.
