Today I got something delicious for you… but it’s not coming from my oven. Nothing sweet, no cake or anything like that today. Just delicious pasta with meatballs, mushrooms, and kale. A tasty dish we love in winter. A lot of great flavors come together in one dish. You should definitely try this one here ;)

Normally, there are no new recipes coming to this blog between Christmas and New Year… This year I decided to show you this delicious One Pot Jambalaya with Chicken and Chorizo. We made this the other day and it was so good I had to share it with you ;) There is nothing wrong with some easy peasy recipes after Christmas when you were cooking and baking for 3 days straight all kinds of fancy dinners, right? Just one pot instead of juggling with 5 pots at a time ;P

Today I got some “soul food” for you – at least that’s what we would call it here. Assuming you like and eat meat. I got a delicious dish that is perfect for fall and winter: Hungarian Goulash! A dish I love since I was a kid. Preparing goulash (the stew, not the soup) takes some time – that’s why we normally make it only on a weekend. Watching a bubbling pot for several hours on a weeknight after work is just not manageable ;)
There are dishes that are known all over the world… and then there are dishes that are so popular even movies get named after. The movie “Ratatouille” is a good example here – although in that case, it is more likely that “Rat-a-touille” is what they are really referring to – when translated it means something like “The stirring rat”… you know that in the Disney movie a rat plays the leading role, right? ;) Anyway. Ratatouille is a delicious dish that probably fits better in late summer than late autumn, but nonetheless, I wanted to include this dish in my little diabetic-friendly recipes this week because it fits so well…
It’s time for something savory. No cake today. It’s pasta time! Although… I don’t think you’d say pasta in this case – I think that term is associated with Italian noodles – these are from Asia, so maybe “It’s noodle time!” :P Just kidding. Who cares how you call it – these Udon Noodles with beef are delicious and that’s all that counts! Am I right?! ;)

Eating healthy is somehow easier in summer – fresh fruits and veggies are smiling at you from every supermarket, the variety is much bigger than in winter. When it’s warm outside, you don’t want to eat anything really unhealthy anyway that weighs heavily on your stomach. In winter, everything looks different. Loads of sweets and greasy food is served all the time because you have to be ready for the cold season ;) How about a tasty dish that lies right between “healthy” and “feel good”? these delicious Oven Veggies with Lentils, Pesto & Eggs, for example? How about that?
