Everyone has probably seen these long, thin, purple eggplants in the produce section of a supermarket. They are usually right next to the »regular« somewhat chubby-looking eggplants. These eggplants are called Japanese eggplants, but sometimes they are also called Chinese eggplants. Dunno why. Here I am using them for a Korean dish to add another Asian country into the mix: Gochujang Eggplant with Rice. An absolute delicacy!
When zucchini are in season and the harvest was good, you can often get those green fellas quite cheaply in supermarkets or at the weekly farmer’s market. So if you are on a budget or don’t want to spend a lot, zucchini might be the perfect veggie for you to prepare dinner. This delicious Zucchini & Potato Casserole can be your main course or served as a side with some meat, fish, etc.
Stews are something that is normally served during the colder months of the year – but that’s not the case for us here. We love delicious stews all year round. Like this simple Vegan Lentil & Potato Stew. It is super easy to prepare and quick on the table. The perfect meal if you don’t want to work a lot on a weeknight to prepare dinner. We all feel the same in this kind of situation – the quicker, the better ;P
We love to bring home a few souvenirs from our holidays so we can remember the wonderful time we had in a faraway country. In my case, those memories are often somehow linked to food. That’s why we tend to bring home recipes for delicious dishes instead of little trinkets – for example, the recipe for these amazing Italian Arancini with Ragù. A reminder of a few lovely days in Sicily ;)
We got plenty of Asian-inspired recipes here on the blog – this delicious Vermicelli Glass Noodle Salad with Meatballs is another recipe to add to the list. A delicious combination of thin rice noodles with a healthy salad and a few well-seasoned meatballs… you have to include some protein in a balanced meal, right? Otherwise, it wouldn’t be a well-rounded meal. Right? ;P
I don’t know about you, but here in Germany, bowls in every possible version took over the lunch game a few years ago. It feels like pretty much every lunch spot is now selling bowls – usually a lot of salad-only bowls, but sometimes something like these Hummus Bowls with Salad & Kofta. These bowls also include salad, of course, but the rest is a bit more substantial ;P
I love my job, but in between I love to bake and try new things in the kitchen. A lot of my friends and colleagues encourage me to bake - for a very simple reason: they get the leftovers - and it seems they like it most of the time ;)
