Today is the last day of the “Vegan Bake Together” week with Andrea from Zimtkeks & Apfeltarte. I can see the finish line! ;) To end this week of vegan recipes I got a delicious cake for you: a simple and easy Vegan Banana & Raspberry Cake. It’s one of my favorite cakes to make – great texture and even better flavors!
It’s time for another banana bread. Haven’t made one in a long time. At least two weeks ;) Today I got a delicious specimen with honey, oats, and pecans. This one is considered to be slightly “healthier” than other banana bread recipes I got here on the blog. No refined sugar and wholemeal spelt flour instead of regular a/p flour. Don’t worry… it still tastes good and not “healthy” ;P
This Bread Pudding with Banana & Walnuts may look a bit boring and not very impressive at first. Seeing it at a brunch buffet I would have skipped it probably. But that would mean I would have made a great mistake ;) This bread pudding is so damn delicious! I really had to pull myself back when taking the photos and not eat everything all by myself ;P
During the pandemic banana bread had a great “revival”. Everybody made them. Of course, banana bread is around for much longer. When everyone suddenly had overripe bananas and a lot of time at hand (because they were stuck at home) banana bread was the “hot s***t” to bake ;P Today I got a slightly modified “banana bread” you could say. In the shape of a bundt cake. Bananas and peanut butter combined. Something you can bake any time of the year ;)
Breakfast is the most important meal of the day they say. Well… in our house, it’s actually dinner and not breakfast ;P
We only have an extensive breakfast on the weekend or when there is a holiday or something like that. Delicious Banoffee Chocolate Pancakes like these here are rather the exception for us…. unfortunately, I have to say. These pancakes are incredibly fluffy and delicious. If you are not as lazy as we are, you can make them, theoretically, every day of the week. They are actually done in no time. Easy peasy pancakes ;P
What can I say… it’s still “Banana Bread Season”! Just another (somewhat less obvious) way to say we are currently still having a global pandemic ;) When life gives you lemons, you should make a cocktail with lemon and vodka… or in our case here, if you got overripe bananas, make banana bread! I saw so much banana bread in the last two years – let’s do a slightly healthier version of it. Shall we? A banana bread made with wholemeal flour, raw cane sugar, and oats. Sounds good, right?! ;)
