Are there any fans of lasagna out here? I assume there are quite a lot of people in the world that looove lasagna. I am one of them, of course! A big piece of lasagna with all those layers, flavorful ragù, béchamel, and loads of melted cheese…. is there anything better? Really… is there?! ;) This Lasagna Soup with Sausage & Spinach is not the real deal but flavorwise very close to the original. An easy soup you can prepare all year round!
I might or might not have mentioned it before – I am a big fan of »everything meatballs«. No matter if it’s actual meat or a plant-based alternative ;) I like them as a snack during the day or when used in a recipe like this one here. These Italian Baked Meatballs (with Rice) are extremely delicious and super easy to prepare. The perfect dish if you don’t want to invest a lot of time in the evening… which is pretty much every day of the week for me ;P
Pita bread is known almost everywhere in the world – it is basically the first type of bread that was made with crushed grains. Flour and some water are mixed and then slapped onto a hot stone. Shortly after that you get something like a pancake/flatbread you can eat. Over the years this type of bread evolved, of course. In Turkey, for example, they serve flatbread with delicious fillings. As an example, I got some flatbread aka. Pide with Spinach, Tomatoes & Feta. Quite easy to prepare and really delicious! Perfect if you got guests coming over ;)
Something you will find on our dinner table quite often in summer is a nice salad. They are easy to prepare, no need to spend hours in the kitchen, and most of the time they are healthy and perfect on a hot day. This Greek Potato Salad is inspired by a Greek Shepherd’s Salad and they know how to eat well and healthy on a hot summer day. The salad also reminds me of my last vacation in Greece… if you serve the salad to me on the beach along with some nice drinks, everything would be perfect ;)
In summer, salads are always our first choice. When the apartment is “burning” with temperatures over 25°C even at night… you definitely do not want a heavy dinner before you go to sleep. Big dinner in combination with high temperatures normally means bad sleep or no sleep for us at all. Eating some salad for dinner is a much better option here. Something like this delicious Roasted Chickpea Salad with feta, for example. So much better ;)
Turkish cuisine lists almost 300 different types of Kofta. Small meatballs and dumplings which are served in many different ways. Many of them are made with different kinds of meat. But of course, they can also be made without meat and plant-based ingredients only. Like these small bulgur balls aka. Fellah Kofta (Köftesi) with Yogurt Cream. Delicious members of the Kofta “universe” that can easily compete with the meaty fellas everybody likes so much ;)
