Tacos are simply great – either as a snack between meals or as a whole meal that is quickly on the table. If you choose the right filling/toppings, of course ;) Braised or pulled pork that is often used here, takes quite a while to get ready. Pulled mushrooms, on the other hand, can be ready much faster. That’s why these Vegan Carnitas aka. Pulled Mushroom Tacos with Guacamole are so popular in our house. Easy to prepare and ready in a flash. What could you want more after a long day at work ;)
It’s always good to have a recipe for simple cookies at hand. Super simple cookies like these (vegan & sugar-free) Semolina Butter Cookies. I mean – they can’t really compete with those plate-sized chocolate chip cookies you know from the coffee shop, but sometimes the very simple ones are perfect and all you need. For example, when you need something that will not upset your stomach. Easy as that ;)
Give me a cupcake and I’m happy. I’m not sure why exactly they make me happy – maybe it’s the smaller size, the fact that everyone can get an individual cake and there is no need to share… or maybe just because there are so many delicious options to chose from ;P Well, these Salted Caramel Cupcakes are definitely in my »Top 10« of the best cupcakes in existence ;) I know that’s a bold statement but just try them – I am pretty sure you will agree with me as soon as you had one. And btw – these delicious little cakes are also vegan. Almost forgot to mention that.

I am a huge fan of everything curry – no matter if it is a mild dish or spicy. Ok… when you start to tear up and breathe fire it might be a bit too spicy. But in general, almost all curry dishes are really good! Often loaded with veggies, a delicious (spicy) sauce, plus some rice… love it! This Vegan Yellow Curry with Tofu makes no exception. Relatively quick on the table and in addition to that, also an eye-catcher with those bright colors. So good!
If you are the type of person that does not want to spend a lot of time in the kitchen cooking, something like a simple soup or stew is always a good choice. In a short time, you can prepare a delicious meal with a few simple ingredients that can feed a large family if you want to ;) This Vegan Chickpea & Potato Soup takes about 1 hour until it’s ready on the table, but the majority of that time you don’t have to do anything. You let the soup simmer away and actually do not even have to pay attention to it until it’s done ;)
