Carrot cakes have a lot of fans around the world. These (relatively) simple cakes are super tasty and usually quite soft and moist (I know, some of you don’t like the word). Well, here comes the cookie version of that cake – delicious Carrot Cake Cookies with Cream Cheese Frosting. These cookies are crunchy on the outside and soft on the inside. So good! You will love them too!
For the past years I have been a bit more selective when it comes to sweets. If possible, I get me some sugar-free chocolate or at least very little sugar. Luckily, there is a lot available now – that’s usually chocolate with a higher percentage of cocoa… stuff many would describe as bitter ;P You have to be careful what you eat if you got diabetes. That does not mean I don’t like regular chocolate – I’m just eating much less of it or use it for baking instead. Like these Kinder Chocolate Oatmeal Chocolate Chip Cookies. If you use chocolate in a bake it’s not chocolate anymore… it’s an ingredient ;P
Cookies are great. You can enjoy them as a sweet snack during the day or even as a replacement for a small breakfast. If you are not using too much sugar for your cookies, they can be a reasonably »healthy« snack/meal. These vegan Banana Oats Walnut Cookies are definitely healthier than other cookies… something that is easy to say if you look at most other cookie recipes out there ;P
Fresh bread from your (own) oven is the best. When you can cut the first slice from the still slightly warm bread… priceless! Unfortunately, most bread recipes are not exactly easy. There’s a lot to consider – the right ratio of dry ingredients to liquid, temperatures, rising times, etc. Don’t even get me started on keeping an eye on sourdough ;P Fortunately, not all bread recipes are complicated. Some are quite easy to prepare. This No-Knead Porridge Bread is one of those. It’s not ready in 5 minutes either, but at least it’s quicker (and easier) than many other breads ;P
I got several recipes with oat/oatmeal cookies here on the blog. Oats are just great for baking! If you ever tried you will probably agree. The results are always delicious in my opinion. I would not have baked so many cookies with oats if a single one had turned out bad ;P These simple and Easy Sugar-free Oats Cookies are no exception to that rule/fact. They are great and something I like to bake quite often.
Happy Cookie Friday! Once again. Today I got a cookie recipe that is from the other side of the globe (if you live in Germany like me). Anzac Cookies are popular cookies from Australia and New Zealand – and here in Germany pretty much unknown I guess. At least I’ve never seen them in any bakery or coffee shop around here. That doesn’t mean that the little fellas aren’t super tasty. I fell in love pretty much in an instant. Oats, coconut, and honey are a great combination! You should definitely give it a try ;)
I love my job, but in between I love to bake and try new things in the kitchen. A lot of my friends and colleagues encourage me to bake - for a very simple reason: they get the leftovers - and it seems they like it most of the time ;)
