Happy Cookie Friday! Today’s cookies go against all current trends – not sugar-free, loads of fat, and even flour… how could you?! There is even peanut butter involved – some people are allergic to that. Insane, right?! ;P Well… you can’t please everybody and I was just in the mood for Easy Peanut Butter Cookies with Cocoa Nibs today. Good and simple cookies… oh and did I mention delicious? Delicious cookies!
Ok – I guess some people probably think cocoa nibs are “trendy add ons” nobody needs. Up until some years ago, I did not know anything about these little chopped cocoa beans but now they and up in many things I bake. They work well in cookies, cakes, or even in your cereal bowl in the morning. Slightly sour, bitter, and crunchy – I think that’s the best way to describe these little cocoa bean pieces. The complement the sweet and salty peanut butter in these cookies very well.
Apart from that, the recipe for these cookies is really simple. If you start mixing now they should be ready to go into the oven in about 10 minutes. After a short baking and an appropriate cooling time they are ready to be enjoyed. We don’t want to burn our tongue with hot peanut butter cookies, so give them some time to cool down. Don’t be a fool like me that always wants to try just one cookie fright off of the baking tray :P
In case you don’t like cocoa nibs or can’t find them in stores you can replace them with chocolate or maybe some chopped peanuts. Just give it a try…

INGREDIENTS / ZUTATEN
1/4 cup (70g) peanut butter
2 tbsp. butter, at room temperature
1/3 cup (65g) brown sugar
1 medium egg
1/2 tsp. vanilla extract
3/4 cup (100g) all-purpose flour
1/2 tsp. baking powder
2 tbsp. (20g) cocoa nibs
1-2 tbsp. brown sugar for coating
65g brauner Zucker
1 Ei (M)
1/2 TL Vanille Extrakt
100g Mehl (Type 550)
1/2 TL Backpulver
2 EL (20g) Cocoa Nibs
1-2 EL brauner Zucker zum Rollen
DIRECTIONS / ZUBEREITUNG
2. Add the peanut butter, butter, and brown sugar to a large bowl and mix until well combined and fluffy. Add the egg and vanilla extract and mix until well combined. Mix the flour with baking powder and add to the bowl – mix until just combined. Add the cocoa nibs and fold in. Make 12-14 balls out of the dough and roll each ball in the brown sugar to coat completely. Place with some space in between on the baking sheet and bake for about 12 minutes until slightly browned and with some cracks on the tops. Take out of the oven and let cool down on the baking sheet for some time, transfer to a wire rack and let cool down completely.
2. Die Erdnussbutter zusammen mit der Butter und dem braunen Zucker in eine große Schüssel geben und für ein paar Minuten hell und luftig aufschlagen. Ei und Vanille Extrakt dazugeben und gut unterrühren. Mehl mit Backpulver mischen und dann zur Schüssel dazugeben und nur kurz unterrühren. Die Cocoa Nibs dazugeben und unterheben. Den Teig dann in 12-14 Portionen aufteilen, zu Kugeln formen und jeweils in braunem Zucker rollen, damit sie komplett mit Zucker bedeckt sind. Für etwa 12 Minuten backen – die Cookies sollten leicht Farbe bekommen und ein paar Risse in der Oberfläche haben. Aus dem Ofen holen und auf dem Blech für ein paar Minuten abkühlen lassen, dann auf einem Kuchengitter komplett auskühlen lassen.
