Cake is a must-have for an afternoon coffee party. No doubt about it. Without something sweet, the coffee date would only be half as good. In the UK, coffee is usually replaced by tea and cake is often swapped for small finger sandwiches and scones – something like these Easy Lemon Buttermilk Scones. Even though I prefer coffee to tea, I really like simple scones (with my coffee)… so good! ;)
A birthday without cake is only half as good, right? You don’t need an elaborate seven layer cake with buttercream – a delicious Lemonade Pound Cake with a few colorful sprinkles on top is all you need. Simple and easy. The cake tastes excellent and does not require a lot of effort to prepare. What more could you want? A few presents, of course… ;P
Simple loaf cakes are always in fashion around here. Why investing more time and effort than necessary in order to have something delicious on the table? This simple Lemon Pistachio Pandan Cake is no exception here. The batter is coming together in no time at all, then you throw everything into a baking tin and bake it. Letting the cake cool down later before cutting it takes longer than the whole preparation ;P
I’ve baked quite a few cookies in my life, but these Yogurette Buttermilk Lemon Cookies are really something special. Sweet, lemony, and surprisingly refreshing – just perfect for a hot summer’s day! I don’t usually recommend storing cookies in the fridge, but it definitely makes sense here to turn them into something even more refreshing ;P
Strawberries are only in season in early summer here. Unfortunately. Fortunately, you can enjoy these little red fellas as jam all year round. It’s not the same as fresh fruits, of course, but still something ;P Jam on bread is almost boring, which is why I also like to use strawberry jam for cookies, for example. Sometimes as a fruity layer between two cookies, or as a filling, like in these Strawberry Lemon Crinkle Cookies. So good! Everybody loves them here.
Cookies are always a great snack when you’re craving something sweet, no matter if it is summer or winter. At the height of summer, however, those extra large, chocolate and sugar-loaded are not always the best option. These small, delicious Lemon Drop Cookies are much better in this case (I think). Not too big, not too sweet, and refreshingly lemony… Just perfect for hot summer days ;)
I love my job, but in between I love to bake and try new things in the kitchen. A lot of my friends and colleagues encourage me to bake - for a very simple reason: they get the leftovers - and it seems they like it most of the time ;)
