Apple Walnut Pie

    Today is another classic pie in the oven. A lot of cakes and pies I’ve seen, while looking for ideas for the Apple Cake/Pie Special, have been with streusel (crumbles). What can I say – there is absolutely nothing wrong about finishing a good cake with some carbs and fat – it makes everything even better :P

    In this case we have crumbles that are even better than the “regular” ones cause they also have chopped walnuts in it. Carbs, fat and nuts. Yay! ;)

    The crust is crispy, the filling full of flavors and everything is topped with those delicious streusel – you can’t go wrong here. If you are not a walnut fan, try pecans, almonds or hazelnuts – or any other nut you prefer ;) A scoop of vanilla ice cream or a homemade vanilla custard and you’re in apple pie heaven. Really. Me like a lot!

    INGREDIENTS / ZUTATEN

    For the filling:
    60 oz. (1.7kg) apples (e.g. Granny Smith)
    4 tbsp. lemon juice
    1 1/4 cup (125g) sugar
    2 tsp. vanilla extract
    1/4 cup (35g) cornstarch
    5 tbsp. apple juice

    For the crust and streusel:
    3/4 cup (100g) chopped walnuts
    2 1/2 cups (325g) all-purpose flour
    3/4 cup (150g) sugar
    1 pinch of salt
    1 egg yolk
    3/4 cup (175g) cold butter
    2 tbsp. breadcrumbs

    Für die Füllung:

    4 EL Zitronensaft
    125g Zucker
    2 TL Vanille Extrakt
    35g Speisestärke
    5 EL Apfelsaft

    Für den Boden und die Streusel:
    100g Walnusskerne
    325g Mehl
    150g Zucker
    1 Prise Salz
    1 Eigelb (Größe M)
    175 g Butter
    2 EL Paniermehl

    DIRECTIONS / ZUBEREITUNG

    1. Peel the apples, quarter, vore and cut into small pieces. Add to a sauce pan with 3 cups of water, the lemon juice, sugar and vanilla extract and bring to a boil. Let the apples simmer for about 3-5 minutes, depending on the kind of apples you have chosen.

    2. Mix the starch with the apple juice to a smooth mixture. Drain the apples, keep the liquid. Take about 1 3/4 cups of the liquid and put it back in the sauce pan. Bring to a boil and stir in the cornstarch mix. Let boil for a moment so it can thicken. Add the apples and mix all well. Set aside and let cool for about an hour.

    3. For the streusel chop the walnuts. In a large bowl mix flour, salt, sugar, egg yolk and the butter in small pieces. Mix with the food processor first and then with your hands until you get nice streusel. Add the walnuts and mix.

    4. Preheat the oven to 390˚F (200°C). Grease a pie dish (9.5 inch) and dust with sugar. Fill in 2/3 of the streusel and press to the bottom and the sides to form a pie crust. Sprinkle with breadcrumbs. Add the apples, smooth out the surface and sprinkle with the remaining streusel. Bake in the oven for 55-60 minutes. If the streusel get too dark, cover with some aluminum foil and continue baking. When done take out of the oven and let cool down completely on a cooling rack.

    1. Äpfel schälen, vierteln, entkernen und in kleine Stücke schneiden. In einen Topf mit 750ml Wasser, Zitronensaft, Zucker und Vanille Extrakt geben, aufkochen und zugedeckt, je nach Apfelsorte, 3–5 Minuten köcheln.

    2. Stärke mit dem Apfelsaft glatt rühren. Äpfel in ein Sieb gießen und die Flüssigkeit dabei auffangen. Ca. 400 ml Flüssigkeit abmessen, zurück in den Topf geben und aufkochen. Die aufgelöste Stärke unter Rühren zugeben und kurz aufkochen lassen, die Masse dickt etwas an. Äpfel zugeben und alles verrühren. Zur Seite stellen und ca. 1 Stunde abkühlen lassen.

    3. Für die Streusel die Nüsse klein hacken. Mehl, Salz, Zucker, Eigelb und Butter in kleinen Stücken in eine Rührschüssel geben. Mit den Knethaken des Handrührgerätes verkneten. Anschließend mit den Händen zu Streuseln verarbeiten. Walnüsse zugeben und alles vermischen.

    4. Den Ofen auf 200°C (390°F) vorheizen. Für den Boden 2/3 der Streusel in eine gefettete und mit Zucker ausgestreute Pie-Form (24cm) geben. Streusel zu einem Boden und Rand andrücken. Mit Paniermehl ausstreuen. Die Äpfel auf dem Boden verteilen und die Streusel darüberstreuen. Im Ofen für 55–60 Minuten backen. Sollten die Streusel zu dunkel werden, mit Alufolie abdecken. Auf einem Kuchengitter auskühlen lassen.
