A delicious dessert doesn’t always have to be complicated – a few simple ingredients, some stirring, and you’ve got something delicious on the table. These little glass jars with Strawberry & Lemon Mascarpone Mousse are definitely from that »quick dessert« category. It doesn’t always take a three-tier layer cake to satisfy a sweet tooth. Also, better than just a piece of chocolate shoved into your mouth when you’re craving something sweet. Right? ;P

Summer is the season for all sorts of berries and fruit. They are best when in season – they taste sweeter, they are cheaper to get, and there is much more of them available. Quite in contrast to winter when everything has to be imported from warmer regions around the world. In winter, those berries and fruits are also often not as good… probably because of the long trip they had to go on to get to Germany.
Using produce from farms close by when everything is in season makes more sense anyway. I probably sound like a broken record here, but it’s true. I’m not saying that local produce is always the best. Absolutely not! But if you include the transport, the impact on the environment and the price into your decision, the products from farms close by are simply better…

If you’re sitting somewhere in a mountain village where no strawberries are grown close by, you might have to come up with other solutions. Maybe some dessert with grass and rocks? Just kidding…
I start babbling nonsense. Let’s get back to the dessert, which is really delicious and uncomplicated when it comes to preparing it. The combination of lemon and strawberry is just really terrific.

I like to prepare the dessert without regular sugar. As an alternative, I use xylitol*, which can be used exactly like sugar and is quite suitable for diabetics and everyone that wants to cut back on sugar. I also often prepare my homemade lemon curd (used in the recipe) without sugar.
Though, keep in mind, this kind of dessert is still not a »light« dessert even though there is no sugar added. There’s still a fair amount of fat and carbs in there. Just as a side note. ;P
In case you want to use less sugar, it’s possible… but nobody will force you, of course. Many of my readers just leave out some of all the sugars in recipes if they don’t want to use it. A substitute is often not even needed, if you like it less sweet, for example. Works also well…
INGREDIENTS / ZUTATEN
(4 servings)
For the strawberry purée:
9 oz. (250g) strawberries
1-2 tbsp. sugar (or xylitol)
1 tbsp. lemon juice
For the lemon mascarpone mousse:
7 oz. (200g) mascarpone
1 tbsp. lemon curd
1 tbsp. sugar (or xylitol)
5.3 oz. (150g) heavy cream
some fresh strawberries for decorations
some extra lemon curd for decorations
some chopped pistachios for decorations
(4 Portionen)
Für das Erdbeerpüree:
250g frische Erdbeeren
1-2 EL Zucker (oder Xylit)
1 EL Zitronensaft
Für die Mascarpone Mousse:
200g Mascarpone
1 EL Lemon Curd
1 EL Zucker (oder Xylit)
150g Schlagsahne
einige frische Erdbeeren für die Deko
etwas mehr Lemon Curd für die Deko
einige gehackte Pistazien für die Deko

DIRECTIONS / ZUBEREITUNG
1. Wash and dry the strawberries. Remove the green parts and then purée them with the sugar and lemon juice. Set aside.
2. Mix the mascarpone with the lemon curd and sugar in a bowl until well combined. Whisk the heavy cream until stiff peaks form, then add it gradually to the bowl with the mascarpone and fold in.
3. Layer the mascarpone cream with the puréed strawberries and some fresh (sliced) strawberries in glasses. Decorate with some additional lemon curd, chopped pistachios and even more strawberries. Enjoy!
1. Die Erdbeeren waschen, trocknen und vom Grün befreien. Mit dem Zucker und Zitronensaft zu einer glatten Masse pürieren. Zur Seite stellen.
2. Mascarpone, Lemon Curd und Zucker in einer Schüssel verrühren. Die Sahne steif schlagen und dann vorsichtig unter die Mascarpone Masse unterheben.
3. Die Creme mit pürierten Erdbeeren und einigen frischen Erdbeeren in Gläser schichten. Mit zusätzlichem Lemon Curd, gehackten Pistazien und noch mehr Erdbeeren dekorieren.
