Desserts can be so simple. If you want to serve something sweet relatively quickly that also looks really fancy and delicious, check out this easy Vegan Biscoff Cream Dessert. With only a few ingredients, you really have something delicious on the table in record time. That’s how it should always be, right? ;)
As much as I love to bake, sometimes I need my sweet fix quicker. Much quicker! The time I would normally need to get only the ingredients ready for a cake is enough to make this dessert here from beginning to end. It’s basically a turbo dessert you can do whenever you feel like it. Next time you have unexpected visitors coming over, you can serve something sweet in no time… only if you are willing to share, of course ;P
Besides being done in an instant – another plus for this dessert is the fact you can have the ingredients at hand all the time. Neither the Biscoff spread nor the cookies or plant-based whipping cream need to be refrigerated. It’s all stuff you can store at your party for quite some time. This gives you quite some flexibility. I love when I have everything at home and don’t have to go shopping to buy missing ingredients for a recipe ;P I mean yes.. at some point you even have to buy the stuff that is sitting in your pantry – I don’t think it appears there miraculously – but you can do that way in advance.
The dessert is vegan because (luckily) Biscoff spread and cookies are both vegan. They don’t have a “vegan” logo on the package but on the back of the package it says “suitable for vegetarians and vegans”. This means they are producing the stuff in a factory together with non-vegan products but the products themselves are completely plant-based ;) If you want to use regular (non-vegan) whipping cream for the dessert because you want to make the dessert, but it does not have to be vegan… go for it. Works just as well ;)

INGREDIENTS / ZUTATEN
(2 servings)
5.6 oz. (160g) vegan whipping cream*
1/4 tsp. cream stiffener
3.2 oz. (90g) Biscoff spread*, divided
8-9 Biscoff cookies*, divided
(2 Portionen)
160g (vegane) Pflanzensahne*
1/4 TL Sahnesteif
90g Biscoff Aufstrich*, aufgeteilt
8-9 Biscoff Kekse*, aufgeteilt
DIRECTIONS / ZUBEREITUNG
1. Whisk the vegan whipping cream with the cream stiffener in a tall container until stiff peaks form. Remove about 3 tablespoons of the whipped cream for decoration and set aside.
2. Warm/melt the Biscoff spread in a small bowl in the microwave for a few seconds – the mixture should be very soft, but not really warm. Reserve about 1-2 teaspoons of it for decoration, add the rest to the cream, and mix in.
3. Crumble about 5-6 of the Biscoff cookies and place about half of them in two serving glasses. Divide half of the Biscoff cream between the glasses, then layer the remaining cookie crumbs and the rest of the cream into the glass. Decorate with the reserved whipped cream, whole Biscoff cookies, more cookie crumbs, and the rest of the melted Biscoff spread (reheat again if it has already set). The dessert can also be easily prepared and placed in the refrigerator until ready to serve. Warning – cookies will get softer over time.
1. Die Pflanzensahne mit Sahnesteif in einem hohen Gefäß aufschlagen, bis die Masse steif ist. Etwa 3 EL der steifgeschlagenen Sahne für die Dekoration herausnehmen und zur Seite stellen.
2. Den Biscoff Aufstrich in einer kleinen Schüssel in der Mikrowelle einige Sekunden erwärmen – die Masse soll sehr weich sein, aber nicht warm. Etwa 1-2 TL davon für die Dekoration zurückhalten, den Rest zur Sahne dazugeben und untermixen.
3. Etwa 5-6 der Biscoff Kekse zerbröseln und etwa die Hälfte davon in zwei Serviergläser geben. Die Hälfte der Biscoff Creme auf die Gläser aufteilen, dann die verbliebenen Keksbrösel und den Rest der Creme ins Glas schichten. Den Nachtisch mit der zurückbehaltenen Sahne, ganzen Biscoff Keksen, mehr Keksbröseln und dem Rest des flüssigen Biscoff Aufstrichs (ggf. noch einmal kurz aufwärmen, falls schon wieder fest geworden ist) dekorieren. Den Nachtisch kann man auch gut vorbereiten und bis zum Servieren in den Kühlschrank stellen. Kleine Warnung: die Kekse werden mit der Zeit weich.
