Easy Chicken Bacon Gnocchi

    Prepare a delicious dinner in 30 minutes or less – is that possible? After a hard day at work or many zoom calls in your “office” at home, you don’t want to spend a lot of time in the kitchen to prepare some food, right? Sure, you could get some food delivered, but that’s often not cheap and also not really coming quick if there are a lot of people ordering at the same time ;P So why not prepare a simple dish like these Gnocchi with Bacon and Chicken? Easy and quick – all we want ;P

    I really like to cook and have no problem spending two hours or longer in the kitchen when needed… it’s my daily job these days ;P But after a busy day I prefer to relax and like to get my dinner done a fast if possible. Time for some easy peasy pasta or maybe a simple salad. There is not much time needed to do any of those dishes – chop chop and you’re done ;P

    I know… for many out there pasta is a “no-go” in the evening, because of all the “evil” carbohydrates ;P That might be true for some but I love a big pot of pasta for dinner. Maybe not after midnight, because that will turn me into a Gremlin, but at “normal” times… always a nice dinner option. And as I said – pretty easy to prepare ;)

    We really love the combination of the bacon and chicken in the creamy sauce, but maybe you like something else? I got much more delicious pasta dishes here on the blog that are also easy to prepare. Take a look! The one with the baked feta needs the longest but is also one of the easiest dishes (you might know this dish from TikTok already) – all the other pasta dishes are ready in 20-30 minutes tops! ;)

    INGREDIENTS / ZUTATEN

    (3-4 servings)

    3.5 oz. (100g) bacon
    1 tbsp. oil (if necessary)
    10.6 oz. (300g) chicken breast
    1 small red onion, chopped
    1-2 garlic cloves, chopped
    1/2 cup (120ml) chicken broth
    1/2 cup (120ml) dry white wine
    1/2 cup (120ml) heavy cream
    1/2 tsp. dried oregano
    salt, pepper
    21 oz. (600g) potato gnocchi, uncooked
    1.8 oz. (50g) parmesan cheese, grated (plus more for serving)

    (3-4 Portionen)

    100g Speck
    1 EL Öl (falls notwendig)
    300g Hähnchenbrust
    1 kleine rote Zwiebel, fein gewürfelt
    1-2 Knoblauchzehen, fein gewürfelt
    120ml Hühnerbrühe
    120ml trockener Weißwein
    120ml Sahne
    1/2 TL getrockneter Oregano
    Salz, Pfeffer
    600g Gnocchi (ungekocht)
    50g frischer Parmesan, gerieben (plus mehr zum Servieren)

    DIRECTIONS / ZUBEREITUNG

    1. Chop the bacon to get small dices, wash and dry the chicken and cut into strips. Peel and chop the onion and garlic and chop finely. Grate the parmesan cheese. Set everything aside.

    2. Heat up a (coated) pan and add the bacon. Fry until nicely browned and crispy. Remove from the pan and set aside. If you had lean bacon and not much fat in the pan, add some oil and heat up. Add the chicken strips and fry until nicely browned from all sides. Add the chopped onion and fry together with the chicken until soft and glossy. Add the chopped garlic and fry for a minute until fragrant. Deglaze with the chicken broth, white wine, and heavy cream – let bubble up for a moment. Season with oregano, salt, and pepper (keep in mind that the bacon is normally quite salty). Add the uncooked gnocchi and the fried bacon and mix in. Reduce the heat to a medium-low, cover the pan and let simmer for 6-8 minutes. Stir from time to time so nothing starts to stick to the pan and burn. If the sauce gets too thick, add some water. Before serving add the grated parmesan and stir in. Season with some more salt and pepper if necessary. Serve with some more grated parmesan on top.

    1. Den Speck fein würfeln, die Hähnchenbrust waschen, trocknen und säubern, dann in Streifen schneiden. Die Zwiebel und den Knoblauch schälen und fein würfeln. Den Parmesan fein reiben. Alles zur Seite stellen.

    2. Eine (beschichtete) Pfanne erhitzen und den Speck darin anbraten und das Fett dabei auslassen. Wenn der Speck Farbe bekommen hat und knusprig ist, aus der Pfanne herausholen und zur Seite stellen. Sollte der Speck recht mager gewesen sein und nicht viel Fett in der Pfanne übrig sein, etwas Öl dazugeben und erhitzen – die Hähnchenbruststreifen einige Minuten darin anbraten, bis sie rundum Farbe bekommen haben. Die Zwiebelwürfel dazugeben und mit anbraten, bis sie glasig sind. Den Knoblauch dazugeben und kurz mit anbraten, bis er anfängt zu duften. Mit der Hühnerbrühe, dem Weißwein und der Sahne ablöschen und dann noch einmal kurz aufkochen lassen. Mit Oregano, Salz und Pfeffer würzen (denkt daran, dass der Speck meist auch schon recht salzig ist). Die ungekochten Gnocchi und die Speckwürfel dazugeben und alles gut vermischen. Die Hitzezufuhr reduzieren, die Pfanne abdecken und die Gnocchi für 6-8 Minuten köcheln lassen. Zwischendurch immer wieder einmal rühren, damit nichts anbrennt. Wenn die Soße zu dickflüssig werden sollte, etwas Wasser dazugeben. Vor dem Servieren den Parmesan unterrühren und noch einmal mit Salz und Pfeffer würzen, falls notwendig. Mit etwas zusätzlichem Parmesan bestreuen und servieren.
