Today I got one of my most cooked dishes for you. Something we really cook a lot at home. Delicious pasta with broccoli and a creamy ricotta and lemon sauce – all done in one pot. If you are hungry and you want food instantly, this one-pot dish is the perfect solution! ;)

To be honest – there are not that many dishes I cook on a regular basis. Most of the time I am cooking something two or three times at the most – unless we like something a lot. That’s probably because I am cooking and baking nonstop for this blog here and like to try new recipes and techniques all the time. When the pandemic started and we were all suddenly stuck at home working from home, it got even “worse” ;P We are cooking more often now and I also started publishing my cooking recipes here on the blog. As some might remember – two years ago the recipes were 99.9% baking recipes here and now I got a new cooking recipe once a week. So if you want to blame someone for the change, blame COVID ;P
Anyway. We really love trying new recipes from all over the world, but a few dishes turned into all-time favorites over the years and are being cooked constantly. One of these dishes is the one-pot pasta here, but also some super easy and quick to prepare oven veggies with halloumi or the “best bolognese sauce ever” – as I like to call it – that one is really really good and is being made at least once a month here ;) I guess you all have a similar pasta sauce you make for years already for your family… the one you make yourself from scratch is always the best in the world ;P

Broccoli is something we almost always have in the fridge – it is cheap and healthy and can be used for many dishes. Here it is combined with ricotta and lemon and for me, it’s the perfect combination! You should try if you haven’t done yet. We did not invent the wheel completely new – this type of pasta dish and the combination of the ingredients have been done endless times I guess ;) Anyway – if you don’t have much time and patience in the evening, I really recommend making this dish. Everything can be cooked in one large pot – the pasta with the broccoli and then you mix everything with the ricotta, lemon, and parmesan. The result is a super creamy and delicious pasta dish everybody will love! What else could you want? Happy faces all around the table ;) My pasta “Alfredo” is done almost as fast as this dish here… maybe I should show you how I make that dish someday too ;)
INGREDIENTS / ZUTATEN
1 broccoli head
zest and juice of 1 organic lemon
9 oz. (250g) ricotta cheese
17 oz. (500g) orecchiette (or similar)
1.8 oz. (50g) parmesan cheese, grated
1-2 tbsp. olive oil
salt, pepper
chili flakes
1 großer Brokkoli
1 Bio-Zitrone, Abrieb und Saft
250g Ricotta
500g Orecchiette (oder ähnliche Nudeln)
50g Parmesan, gerieben
1-2 EL Olivenöl
Salz, Pfeffer
Chiliflocken

DIRECTIONS / ZUBEREITUNG
2. Bring a large pot with salted water to a boil. Add the pasta and cook about 2 minutes shorter than the package recommends for al dente noodles. When the time is up, add the broccoli florets and cook together with the pasta for two minutes. When everything is ready, take about 1 cup of the pasta water out of the pot and set it aside – be careful not to burn yourself. Drain the pasta and broccoli and return to the pot. Add the olive oil and mix to combine. Add the ricotta cheese mixture and a couple of tablespoons of the pasta water to the pot and stir to combine. Continue stirring and adding more pasta water to create a creamy sauce that sticks to the pasta – you might not need all of the water. Add the grated cheese, mix, and season with salt, pepper, and chili flakes. Serve with some more grated parmesan.
2. Einen großen Topf mit reichlich Salzwasser zum Kochen bringen. Die Nudeln dazugeben und etwa 2 Minuten kürzer kochen, als auf der Packung für “al dente” angegeben ist. Für die letzten zwei Minuten dann den Brokkoli mit in den Topf geben und beides kochen lassen. Wenn die Zeit abgelaufen ist, etwa 1 Tasse vom Nudelwasser aus dem Topf herausnehmen und zur Seite stellen, die Nudeln und Brokkoli in ein Sieb schütten und abtropfen lassen. Beides zurück in den Topf geben und mit dem Olivenöl vermischen. Die Ricottamischung zum Topf dazugeben und zusammen mit ein paar Esslöffeln vom Pastawasser mit den Nudeln verrühren. Nach und nach Nudelwasser dazugeben und rühren, bis eine cremige Soße entsteht, die an den Nudeln haften bleibt. Den geriebenen Parmesan dazugeben und unterrühren. Mit Salz, Pfeffer und Chiliflocken würzen. Mit etwas mehr geriebenem Parmesan servieren.
