And so easy to prepare – 20 minutes tops and you can sit down and enjoy this delicious dish with your loved one(s) ;)
I have to admit – these ranch-style eggs are nothing I would do on a Monday morning just for myself. I prefer a cup of coffee and whatever edible is within reach on a Monday morning. That can be a slice of bread or leftover cake from Sunday afternoon with the family. On a Monday I really don’t care ;) On a weekend – completely different. On the weekend I normally take some time to prepare breakfast and enjoy it with my bf or friends… Monday does not deserve this. Monday is the beginning of everything evil. Just kidding ;P
Anyway. I guess some of you would call this dish “hipster food”. All that’s missing is an additional grilled avocado and then you’re in a small hipster coffee shop somewhere in London or L.A. ;P Well… that’s probably not too far away from reality. This dish is a popular menu item in locations like that – even here in Berlin. BUT… it’s really delicious. You can’t argue about that. Without the “grilled avo”, of course. No fancy-schmancy avo needed ;P
I now use refried beans in several of my recipes here on the blog. Simple cooked and fried beans with onions and some spices that have been mashed until you get a chunky dark paste. I love it. Refried Beans are easy and quite cheap to make, a good addition to your diet, and can be used for many dishes. From Sandwiches to wraps, quesadillas and much more. All very delicious! ;) It’s actually a good idea to prepare a large pot of refried beans and use it for as many recipes as possible. If you want to keep refried beans for longer, you can easily freeze a container. Just saying ;)
INGREDIENTS / ZUTATEN
For the pico de gallo:
1 large ripe tomato, diced
1 small red onion, chopped
2-3 stalks of cilantro, chopped
1 tbsp. lime juice
salt, pepper
For the huevos rancheros:
5-6 tbsp. refried beans
4 small tortillas
4 medium eggs
some olive oil for frying
some chili sauce
salt, pepper
taco seasoning (optional)
fried pimientos de padrón or some sliced avocado (optional)
Für das Pico de Gallo:
1 große reife Tomate, gewürfelt
1 kleine rote Zwiebel, gehackt
2-3 Stängel Koriander, grob gehackt
1 EL Limettensaft
Salz, Pfeffer
Für die Huevos Rancheros:
5-6 EL Refried Beans
4 kleine Tortillafladen
4 Eier (M)
etwas Olivenöl zum Braten
etwas Chilisauce
Salz, Pfeffer
Taco Seasoning (optional)
gebratene Pimientos de Padrón oder Avocadoscheiben (optional)
DIRECTIONS / ZUBEREITUNG
2. Heat up a large frying pan and warm the tortillas a bit. Set aside. Add some oil to the pan and fry the eggs sunny side up to your liking. Warm up the refried beans in the microwave. Spread some refried beans on each tortilla, add the fried eggs on top and finish with some pico de gallo. Drizzle with some hot sauce, season with salt, pepper, and taco seasoning (optional), and serve immediately with some fried pimientos de padrón or some sliced avocado (optional).
2. Eine große Bratpfanne erhitzen und die Tortillas (ohne Fett) etwas erwärmen. Zur Seite legen. Etwas Öl in die Pfanne geben und darin die Spiegeleier anbraten. Die Refried Beans in der Mikrowelle erwärmen. Eine kleine Portion der Bohnen auf jedem Tortilla Fladen verstreichen, die Spiegeleier darauf legen und mit etwas Pico de Gallo abschließen. Mit etwas Chilisauce beträufeln, mit Salz, Pfeffer und Taco Seasoning (optional) abschmecken und dann mit einigen gebratenen Pimientos de Padrón oder Avocadoscheiben (optional) servieren.

1. For the pico de gallo wash and dry the tomato and cut into small dices. Peel the onion and chop finely. Wash and dry the cilantro and chop coarsely. Add everything to a bowl and mix to combine. Add the lime juice and season with salt and pepper. Set aside.
2. Heat up a large frying pan and warm the tortillas a bit. Set aside. Add some oil to the pan and fry the eggs sunny side up to your liking. Warm up the refried beans in the microwave.
