Sometimes there is no way to get around it… Baked Feta Pasta drove the internet wild some time ago. It took me a while to understand why… but I do now. A super simple dish that tastes really delicious. It’s the perfect meal to prepare when coming home from work and don’t want to spend much time in the kitchen. Just grab a block of feta, some tomatoes and you’re almost ready to go ;)
It’s really weird that a short recipe video on a social media platform like TikTok can cause food shortages. Apparently, that’s what happened in Finland when the Baked Feta Pasta had its peak in popularity ;) I assume everybody that saw the videos wanted to make some pasta and suddenly all the feta was gone from the supermarkets. I wonder what the next hype will be… here in Germany maybe something made with liverwurst or pretzels and beer. Maybe a combination of all of that. Just kidding ;P
Well.. that hype got me too. Although I have to say that baked feta with tomatoes has been around much longer than the TikTok videos. So the concept with the feta and tomatoes from the oven is not really new. However, adding the cooked pasta to get a nice pasta sauce with tomatoes and feta was new for me. Super simple and really delicious – all you need and all you want ;)
When seasoning, by the way, you have to be careful – depending on the feta you use and salty that feta is, you have to use more or less salt. By the way… you can adapt the recipe in many ways. Garlic is a nice addition here but you could also add finely chopped peppers to the feta. They will not get super-soft, but a nice addition to the tomatoes. You could also try zucchini, pumpkin or eggplant. Just make sure the pieces are small enough so they can cook through while in the oven with the feta.

INGREDIENTS / ZUTATEN
(3-4 servings)
7 oz. (200g) feta (one block)
1/4 cup (60ml) olive oil
18 oz. (500g) cherry tomatoes
1 red onion, chopped
5-6 garlic cloves
1/2 tsp. dried oregano
1/4 tsp. red chili flakes
salt, pepper
14 oz. (400g) pasta (rigatoni, penne, etc.)
som fresh herbs or basil leaves (optional)
(3-4 Portionen)
200g Feta (ein Stück)
60ml Olivenöl
500g Cherrytomaten
1 rote Zwiebel, gehackt
5-6 Knoblauchzehen
1/2 TL Oregano
1/4 TL rote Chiliflocken
Salz, Pfeffer
400g Nudeln (Rigatoni, Penne, etc.)
einige frische Kräuter oder Basilikumblätter (optional)
DIRECTIONS / ZUBEREITUNG
1. Preheat the oven to 390°F (200°C). Wash and dry the tomatoes. Peel and chop the onion, peel the garlic and cut in half if big. Add the tomatoes, chopped onion, garlic, oregano, and chili flakes to an ovenproof skillet or casserole dish. Drizzle about half of the oil over everything and mix to combine. Make space in the center and place the feta block between the tomatoes. Drizzle the feta with the remaining oil and season with salt, pepper, and more oregano and chili flakes to your liking. Bake for 40-45 minutes until the tomatoes are very soft and the feta has a golden brown color on top.
2. While the feta is baking, cook the pasta according to the package instructions. Reserve about 1/2 cup of the pasta water before draining.
3. Take the feta and tomatoes out of the oven and mix everything with a spoon, then add the drained pasta and mix to combine. Gradually add some of the pasta water to thin out the sauce a bit – mix well. Serve with some fresh herbs or basil leaves on top (optional).
1. Den Ofen auf 200°C (390°F) Ober-/Unterhitze vorheizen. Die Tomaten waschen und trocknen. Die Zwiebel schälen und grob hacken, den Knoblauch schälen und größere Knoblauchzehen ggf. halbieren. Tomaten, Zwiebel, Knoblauch, Oregano und Chiliflocken in eine Auflaufform geben und mit etwa der Hälfte des Öls beträufeln. Alles gut vermischen und dann den Fetablock in die Mitte zwischen die Tomaten setzen. Den Feta mit dem restlichen Öl beträufeln und alles mit Salz, Pfeffer und ggf. noch mehr Oregano und Chiliflocken würzen. Für etwa 40-45 Minuten backen, bis die Tomaten sehr weich sind und der Feta eine goldene Farbe bekommen hat.
2. Während der Feta im Ofen ist, die Nudeln nach Packungsanleitung kochen. Etwa 1/2 Tasse des Nudelwassers vor dem Abgießen zur Seite stellen.
3. Den Feta und die Tomaten aus dem Ofen holen und mit einem Löffel vermischen. Die abgetropften Nudeln dazugeben und alles gut vermischen. Die Soße mit etwas Nudelwasser verdünnen und alles gut verrühren. Nach Belieben noch nachwürzen und dann mit ein paar frischen Kräutern wie z.B. Basilikum servieren (optional).
