I went through my cookie recipes – again – and found a nice selection I wanted to show you. It’s all about nuts today! Walnuts, Pecans, Macadamias, Cashews etc. All the good stuff we all love! I’m sure there are plenty of recipes you will like as much as I do ;)

Last time it was all about chocolate. My most favorite Cookies made with chocolate. This time the nuts are the “heroes” inside the cookies. Sometimes a lot, sometimes only a few (or just one per cookie). All in all delicious. If you are allergic to nuts, I am really sorry, but I’m sure you will find many other cookies that are fine, if you go through my cookie category – there are much more recipes.
1. Pistachio Cardamom Shortbread Cookies
Shortbread (cookies) have their origin in British cuisine. A long time ago some Scottish guy made them and named them – no idea why – shortbread? Why not crunchy bread? Or cookie? Well… I am not here to judge, but to enjoy those cookies with a cup of tea or some coffee – especially when made with pistachios ;) That’s why you have to try these delicious Pistachio Cardamom Shortbread Cookies!

If you have some leftover granola (with nuts) and you don’t want to eat it in the morning with some milk, you can make something else with it: Granola Muesli Cookies! This way you get all the nice and healthy nuts, oats and fruits you need in a handy shape. Something you can eat all day long ;)

3. Banana Almond Walnut Cookies
These Banana Almond Walnut Cookies are made without flour or refined sugar. I guess you could say these cookies with banana, almonds, and walnuts are kind of healthy. They are still kind of sweet… so far definitely among my most favorite cookies of all time :)

4. Vegan Walnut Chocolate Chip Cookies
Walnuts are among my most favorite nuts when it comes to baking. Cakes or cookies are so delicious when you use walnuts. These Vegan Walnut Chocolate Chip Cookies are a variation of classic chocolate chip cookies – just without any ingredients coming from animals. Not always needed ;)
I am a huge fan of pecans! I think there is always a package in my cabinets – just in case… ;) Unfortunately, they are not very common here in Germany. I mean you can get them in many places but they are hardly used in bakes here. So sad when you think about all the nice stuff you can make… for example these delicious cookies here: Butter Pecan Cookies!

6. Maple Walnut Oatmeal Cookies
I’ve got some more cookies with walnuts for you. And Oats. And Maple Syrup. Such a good combination! These Maple Walnut Oatmeal Cookies are simply awesome, crunchy and nice :)

7. Double Chocolate Macadamia Nut Cookies
Double chocolate is always a good idea I think. Combining it with some macadamia nuts makes it (aka. the cookies) even better! Macadamias are a bit pricey normally, but it’s really worth it. These Double Chocolate Macadamia Nut Cookies are really in a league of their own ;)

8. Double Chocolate Walnut Pecan Cookies
If you liked the ones before already – these might be also right for you. Double Chocolate and double the nuts. These Double Chocolate Walnut Pecan Cookies have all the best cookies can be made with ;)

Those little fellas are pretty simple shortbread cookies. With some almonds, walnuts or cashews added, these little bears are ready for any party with nuts or cookie lovers :P

Ok – these little fellas are not quite typical “cookies”. They have a similar shape and they have nuts in it. Peanuts. With the caramel and chocolate just too good to care if you call them Caramel Nut Clusters, cookies or something else.
