Today’s recipe for #CookieFriday is not really a “classic” cookie recipe. Actually not a cookie recipe at all, but these Caramel Nut Clusters are small, sweet and delicious. I think they fit for #CookieFriday… somehow. Who cares – they are delicious. That’s all that counts! :P
Sometimes the craving for something sweet is really big. So big, you have to do something about it! The lucky ones have a shop close selling sweets 24/7. In Berlin actually, no problem cause we have little shops everywhere called “Späti” – other cities in Germany…. well, not so lucky ;) In that case you have to do something yourself to get sweets. One thing I can recommend is a microwave cupcake. Really easy to mix and done in under 5 minutes. If you have a bit more time, you can make these clusters here. I assume most of us have the ingredients at home: salted nuts, cream toffees (caramels) and chocolate.
OK – maybe it’s only me having all that stuff at home all the time. So next time you go shopping, get the ingredients – just in case. All you need in addition is a microwave (or stove) and a fridge. You melt the cream toffees, the chocolate and then you just have to assemble the clusters – it is really easy.
BE WARNED! These clusters can cause problems with your teeth. The caramel is really sticky and hard if you cool the clusters (which I recommend because of the chocolate). So be careful ;) Also do not make them too big. Small bite-size is much better. You should be able to eat them in one piece. If you have to take a bite, you will end up with chocolate all over yourself – we don’t want that! Unlike many other things in life – smaller is better here :P
INGREDIENTS / ZUTATEN
5.3 oz. (150g) mixed salted nuts (e.g. cashews, almonds, peanuts)
5.3 oz. (150g) cream toffee (caramels)
7 oz. (200g) semi-sweet chocolate
flaky sea salt
150g gesalzene Nüsse (Cashews, Erdnüsse, Mandeln etc.)
150g Sahne Toffees
200g Zartbitterschokolade
Meersalzflocken
DIRECTIONS / ZUBEREITUNG
2. Melt the caramels in a heatproof bowl in the microwave or over a pot with simmering water. Use two teaspoons to drop a small amount of melted caramel on each pile of nuts – try to get all nuts stick together. Place in the fridge for about 10-15 minutes so the caramel can harden and keep the clusters together.
3. Chop the chocolate coarsely and melt as well in the microwave or over a pot with simmering water. Dip the caramel-nut clusters into the chocolate so they are covered completely, remove excessive chocolate, sprinkle with some sea salt flakes and place on the baking sheet/board with baking parchment and let dry completely.
2. Die Sahne Toffees in eine hitzebeständige Schüssel geben und in der Mikrowelle (oder über einem Topf mit köchelndem Wasser) langsam schmelzen lassen. Mit zwei Teelöffeln kleine Portionen des geschmolzenen Karamells auf die Nüsse setzen und dabei möglichst alle Nüsse eines Häufchens zusammenkleben. Für etwa 10-15 Minuten in den Kühlschrank stellen, damit das Karamell fest wird und die Häufchen zusammenhalten.
3. Die Schokolade grob hacken und ebenfalls in der Mikrowelle oder über einem Topf mit köchelndem Wasser schmelzen. Die Nuss-Karamell-Häufchen auf eine Gabel setzen und dann durch die Schokolade ziehen. Überschüssige Schokolade abstreifen und dann wieder auf das Blech/Brett mit dem Backpapier setzen, mit etwas Meersalzflocken bestreuen und komplett trocknen lassen.

Ingredients
