They’re small, round, with a hole in the middle, and absolutely delicious. Easy Apple Fritters (or Apfelküchle, as we call them in Germany) are always a welcome dessert here at home. With a bit of vanilla custard, these little apple bites are simply the best. Luckily, they’re so easy to prepare – you can quickly make more if you did not make enough and there is still demand… ;P

Apple fritters have many names – fried apple rings, apple krapferl, apple beignets… well, and in Germany we call them Apfelküchle or Apfelküchlein. Depending on the region you’re in, they are called differently. Wikipedia claims that apple fritters (similar to these here) originate in Baden (Württemberg) – the area in Germany the family calls home and where still a lot of them are living. Cheers to our BaWü! ;P
Anyway. We’ve been enjoying these delicious apple fritters for as long as I can remember. Grandma used to throw apple fritters into hot fat quite often, because she liked them. Mom did too, and we do the same. Just not as frequently. However, we don’t always prepare apple fritters the same way as mom or grandma did. The recipe below is the quick version, if you really need something sweet and delicious quickly. Traditionally, however, we prepare Swabian apple fritters with a different type of batter…

Our more traditional family recipe for Swabian Apple Fritters (we are not from Swabia, if you wondered) is a little different from this one here. When making traditional apple fritters, the apple slices are dipped in a fairly thick batter and then fried in a good amount of butter. This recipe here uses a mixture of beaten eggs and milk, as well as some flour – but separately. Similar to what you would do with fried chicken. Preparing the fritters like that is quicker. Unfortunately, the kitchen will quite smelly when finished with the apple fritters. But that is the same for all fritters – traditional recipe or quick version. The main reason why we don’t make them that often. ;P
No matter which recipe you use, the result will be equally delicious. The batter for these apple fritters is a bit thinner. This makes the dessert a bit healthier in the end – provided you don’t overdo it with the sugar and cinnamon mixture. ;P

One more recommendation – peel the apples before turning them into apple fritters. You can see in our pictures that we did not peel the apples, but I don’t think everyone likes that. The advantage of skinny apples is the fact, that the egg mixture and flour stick much better on the sides. Well, and you don’t have to chew on apple peel.

The sugar icing quickly turns the healthy attributes of apples into the opposite. But what the heck… it’s a dessert, and you can treat yourself to something sweet sometimes. Without thinking about it too much. Right?! Unless you are a diabetic – then you might want to keep an eye on your blood sugar. ;P
You could also make some Apple Pie Streusel Muffins with apples – without the need to deep-fry anything in hot fat/oil. When apples from local farms are cheaper and available everywhere in fall, you can create a great (and quite cheap) snack with those apples. Perfect for breakfast or as a sweet snack between meals… We love them!
INGREDIENTS / ZUTATEN
(4 servings)
oil for frying
4 medium apples, cored
2 large eggs, whisked
2 tbsp. milk
1/2 tbsp. maple syrup*
1 pinch of salt
4.2 oz. (120g) all-purpose flour
1/4 tsp. vanilla powder* (optional)
2-3 tbsp. sugar
1/2 tsp. ground cinnamon
(4 Portionen)
Öl zum Anbraten
4 mittlere Äpfel, Gehäuse entfernt
2 Eier (L), verquirlt
2 EL Milch
1/2 EL Ahornsirup*
1 Prise Salz
120g Mehl (Type 405)
1/4 TL Vanillepulver* (optional)
2-3 EL Zucker
1/2 TL Zimt

DIRECTIONS / ZUBEREITUNG
1. Wash and dry the apples. Remove the cores (e.g., with an apple corer*) and cut them into thick slices. If you don’t like eating the apple peel, you can remove that as well.
2. Whisk the eggs with milk, maple syrup, and a pinch of salt in a small bowl. Mix the flour with the vanilla powder (optional) and spread it on a small plate. First, coat the apple rings with flour, dip them in the whisked egg, and then coat them once more with flour.
3. Heat up a small frying pan* or pot with some oil – the apple fritters should move easily in the oil, but don’t necessarily have to be able to float. Fry the apple fritters ins small batches until golden brown on both sides, drain them on some kitchen paper, then roll them in a mixture of sugar and cinnamon. The apple fritters are best when still warm, with some vanilla sauce or custard on the side.
1. Die Äpfel waschen und trocknen. Die Kerngehäuse entfernen (z.B. mit einem Apfelentkerner*) und dann in dicke Scheiben schneiden. Wer nicht so gerne Apfelschale isst, kann die noch entfernen.
2. Die Eier mit Milch, Ahornsirup und einer Prise Salz in einer kleinen Schüssel verquirlen. Das Mehl mit dem Vanillepulver (optional) vermischen und auf einem kleinen Teller verteilen. Die Apfelringe zuerst im Mehl wälzen, dann im verquirlten Ei wenden und danach noch einmal im Mehl wälzen.
3. Eine kleine Pfanne* oder einen kleinen Topf mit etwas Öl erhitzen – die Apfelküchle sollten sich leicht im Öl bewegen lassen, müssen aber nicht unbedingt darin schwimmen. Die Apfelküchle (nicht zu viele auf einmal) von beiden Seiten goldbraun anbraten, auf etwas Küchenpapier abtropfen lassen, dann in einer Mischung aus Zucker und Zimt wälzen. Die Apfelküchle schmecken am besten, wenn sie noch warm sind zusammen mit etwas Vanillesoße.
