The end of summer and fall is the time when apples are the »It Girls« of the fruits in Germany ;P Why? Well… mostly, because there is not much else growing locally on farms when it gets colder. The season for other fruits and berries is pretty much over here and apples take over. I am fine with that – time to make delicious Vegan Apple Fritters, isn’t it? ;) Theoretically, you can make them all year round because apples are available all year round but… well… That’s all ;P
I am a big fan of everything deep-fried. I mean – who isn’t, right? I am pretty sure there are a lot of people out there like me. Slightly overweight and very happy with deep-fried food ;P The combination of roasting flavors and fat is hard to resist. I think that’s scientifically proven in several studies. Our taste buds love it ;) Well, and fat is a great carrier for flavors… there you have it!
Well. Normally it doesn’t matter if you deep-fry something savory or something sweet – both taste great and make us crave more. These apple fritters are even worse because they also have a sugar glaze on top ;P That’s basically a knife stabbed in your back when you are trying to lose some weight (or just try to eat less sugar). I say this from experience. But it’s ok to have a cheat snack from time to time. Don’t feel discouraged trying these fritters. They are really delicious and not trying is not an option ;)
I know apple fritters like these here with the large apple pieces and softer dough primarily from US street markets and amusement parks. As far as I know, there are more snacks that are called »apple fritters« – stuff like apple-filled beignets or donuts. Here in Germany, we have something called »Apfelküchlein« that also falls into the category of apple fritters I guess… all of them include apples and some form of deep-frying ;)
Anyway. These fritters here are vegan. Most recipes for apple fritters include milk and eggs but both can be scrapped from the ingredients list. Regular milk can easily be replaced with a veggie alternative like oat milk and for the eggs – similar easy to replace with chia eggs. Those tiny black seeds are soaked in water and then used the same way as an egg in the batter. Most people won’t even notice a difference I guess..
I said it before – I really like deep-fried food. That’s why I heat up a large pot with oil from time to time and do recipes for the blog here. I don’t really like the smell in the kitchen after deep-frying something, but the results are always delicious! ;P If your kitchen has a proper ventilator to get rid of smoke and smells you might have fun with the following recipes as well. INGREDIENTS / ZUTATEN
(9 fritters)
For the apple fritters:
1 tbsp. chia seeds
2 tbsp. water
1 cup (130g) all-purpose flour
1 tbsp. rolled oats
1 1/2 tsp. baking powder
1 tsp. ground cinnamon
1/4 tsp. salt
1/2 cup (125ml) oat milk
2 tbsp. maple syrup
1 tsp. vanilla extract
2 granny smith apples, peeled, cored & diced
oil/fat for frying
For the glaze:
1 cup (130g) confectioners’ sugar
1-2 tsp. lime or lemon juice (plus more if needed)
(9 Apfel Fritter)
Für den Teig:
1 EL Chiasamen
2 EL Wasser
130g Mehl (Type 405)
1 EL Haferflocken (Feinblatt)
1 1/2 TL Backpulver
1 TL Zimt
1/4 TL Salz
125ml Haferdrink
2 EL Ahornsirup
1 TL Vanille Extrakt
2 Granny Smith Äpfel, geschält, entkernt & gewürfelt
Öl/Fett zum Ausbacken
Für die Glasur:
130g Puderzucker
1-2 TL Limetten- oder Zitronensaft (ggf. etwas mehr)
DIRECTIONS / ZUBEREITUNG
1. Add the chia seeds and the water to a small bowl and let soak for about 5-7 minutes until the chia seeds turn into a gloopy mess ;) Peel, core, and dice the apples. Set aside.
2. Mix flour, rolled oats, baking powder, cinnamon, and salt in a large bowl until well combined. Add the oat milk, maple syrup, vanilla extract, and chia seeds and mix to combine. Add the diced apples and fold in – you want the apples to be covered with the batter as much as possible. Set aside.
3. Heat up a small pot with oil or frying fat. It has to be enough, so the fritters can swim freely in the oil/fat. Heat up to a temperature of about 175°C (347°F) – try to keep this temperature and check often while deep-frying the fritters. If the temperature drops a lot the fritters will soak up a lot of fat. If the temperature is too high the fritters will burn before they are done. Use two tablespoons and place a good amount per fritter in the hot oil/fat. Even though the batter with the apples is quite lumpy it will all stick together if you add it to the oil/fat in one go. Do not overcrowd the pot – three fritters at a time should be the maximum, otherwise, the temperature will drop for sure. Deep-fry the fritters for a few minutes on each side until nicely browned. Take out of the pot (with a slotted spoon, for example) and let drain on a cooling rack with some kitchen paper underneath. Repeat until all batter is used.
4. For the glaze mix the confectioners’ sugar with lime juice or lemon juice. You want a thick and not too runny consistency. Glaze the still-warm apple fritters and serve as soon as possible. Those fritters taste best when fresh and warm ;)
1. Chiasamen und Wasser in einer kleinen Schüssel verrühren und dann etwa 5-7 Minuten stehen lassen, damit die Chiasamen aufquellen können (wird eine glibberige Masse werden). Äpfel schälen, Kerngehäuse entfernen und in kleine Würfel schneiden. Zur Seite stellen.

Die gewürfelten Äpfel dazugeben und unterheben. Die Äpfel sollten so gut wie möglich mit dem Teig bedeckt sein. Zur Seite stellen.
3. Öl oder Frittierfett in einem kleinen Topf erhitzen. Es sollte genug sein, damit die Teigportionen frei schwimmen können. Das Öl/Fett sollte etwa Temperatur von etwa 175°C (347°F) haben. Versucht die Temperatur zu halten und überprüft öfter mal beim Frittieren mit einem Thermometer. Wenn die Temperatur stark abfällt, saugen sich die Krapfen mit viel Fett voll. Wenn die Temperatur zu hoch ist, verbrennen die Apfel Fritter, bevor sie durchgebacken sind. Eine gute Portion Teig/Äpfel pro Fritter mit zwei Esslöffeln ins heiße Öl/Fett gleiten lassen. Der Teig ist recht »klumpig«, aber sollte beim Frittieren eigentlich gut zusammenhalten, wenn man den Teig zügig ins Öl/Fett gibt. Den Topf nicht überfüllen – drei Fritter maximal, sonst sinkt die Temperatur mit Sicherheit. Die Fritter einige Minuten je Seite frittieren, bis sie schön gebräunt sind. Aus dem Öl/Fett fischen (z.B. mit einem Schaumlöffel) und auf einem Kuchengitter mit Küchenpapier darunter abtropfen lassen. So oft wiederholen, bis der Teig komplett aufgebraucht ist.
4. Für die Glasur den Puderzucker mit Limetten- oder Zitronensaft verrühren. Die Konsistenz soll dickflüssig und nicht zu dünn sein. Die noch warmen Apfel Fritter glasieren und dann auch schon recht bald servieren – die kleinen Dinger schmecken frisch und warm einfach am besten ;)
