No-Bake Amaranth Chocolate Cookies (no sugar added)

    Today will be an easy Cookie Friday! Not much to do actually. No baking needed. These cookies are much less work than other cookies you find here on the blog… even though cookies are normally not that much work anyway. Well… these No-Bake Amaranth Chocolate Cookies are a quick fix if you are craving something sweet. They are also sugar-free… Did I mention that already?! Well. Now you know! ;)

    As I mentioned already – making cookies is generally not very complicated. These fellas here are even less complicated than the ones you have to bake. Melt some chocolate and mix in the remaining ingredients – a scoop later you already got your first cookie on the baking tray. It couldn’t be easier and the result is simply amazing!

    I fell in love immediately with these cookies when I made them for the first time. They remind me somehow of those puffed rice thingies with chocolate coating – you probably remember them… The name starts with an »N« and ends with »Nippon«. At least here in Germany. Dunno about the rest of the world. Amaranth is, of course, no rice, but it is also puffed up here and gives the cookies in combination with the chocolate a remarkable texture. Very light and crunchy.

    Puffed amaranth alone is quite tasteless and feels like small polystyrene balls in your mouth. BUT when you add some dried fruits and nuts and dip everything in chocolate, you get a really super tasty sweet snack. I love it! I did use sugar-free chocolate for these cookies since I wanted to enjoy these fellas as well. I guess you know I have some problems with sugar – in case you don’t have to keep an eye on sugar, you can use regular chocolate instead. Nice semi-sweet chocolate works well here.

    The mixture will look a bit crumbly at the beginning, but the little piles on the baking sheet will hold together as soon as the chocolate gets cold and solidifies. So don’t worry if it looks like a big mess at the beginning. You can also use other dried fruits, by the way, if you’re not so fond of cranberries. But I recommend using something fruity preferably with some acidity to balance the sweetness of the chocolate. Tastes much better then…

    INGREDIENTS / ZUTATEN

    4.2 oz. (120g) semi-sweet chocolate (sugar-free)*, melted
    1.4 oz. (40g) amaranth*, puffed
    1 oz. (30g) dried cranberries, chopped
    0.7 oz. (20g) toasted hazelnuts, chopped

    (ca. 20 Cookies)

    120g Zartbitterschokolade (zuckerfrei)*, geschmolzen
    40g Amaranth*, gepufft
    30g getrocknete Cranberries, gehackt
    20g geröstete Haselnüsse, gehackt

    DIRECTIONS / ZUBEREITUNG

    1. Chop the chocolate coarsely and melt it in the microwave. Add the amaranth, chopped cranberries and hazelnuts to a large bowl and mix well with the melted chocolate. Use spoons to place small portions of that mixture on a baking sheet lined with baking parchment and shape them into cookies – it will be quite sticky and crumbly, but it will stick together at the end… don’t worry.

    2. Let the cookies dry for about 30 minutes. If your kitchen is warm you might want to let the cookies cool down in the fridge. Store the cookies in a cool place.

    1. Die Schokolade grob hacken und in der Mikrowelle schmelzen. Amaranth, die gehackten Cranberries und Haselnüsse in eine große Schüssel geben und mit der geschmolzenen Schokolade vermischen. Mit Löffeln kleine Portionen der Masse auf ein Backblech mit Backpapier setzen und zu Cookies formen – wird alles etwas bröseln und kleben, aber ist machbar und hält am Ende auch zusammen.

    3. Die Cookies für etwa 30 Minuten trocknen lassen – sollte es in der Küche warm sein, ggf. in den Kühlschrank legen. Die Cookies an einem kühlen Ort lagern.

      Made these with dark chocolate and hazelnuts (not a fan of cranberries). They’re deliciously decadent and complex. I personally love anything crunchy, and crunchiness+chocolate is just heavenly oh I might try them with dates next time for little extra something something will be making them on repeat I’m sure
