Easy Peasy Cranberry Apple Crumble

    If you need a quick fix for a delicious dessert you should definitely make yourself a crumble. It’s so good and super easy to prepare. What kind of fruits or berries you use to make a crumble doesn’t matter – it will turn out great no matter what. This one here is made with a mixture of apples and cranberries. Delicious combination!

    Last week I found fresh cranberries in the supermarket for the first time this year. Those little red berries that are in season from October to December. Unfortunately, they are still not very common here in Germany… unlike in the US.

    In the US cranberries are used much more often. I guess it’s safe to say they are a staple for Thanksgiving and Christmas. If there is turkey, there is also cranberry sauce, right? ;) It’s like Advent and cookies – they just belong together.

    I actually like using cranberries in my recipes. If you use the search here on the blog you will find some recipes with those berries. You can use them fresh or you can use dried ones – they go well with many other berries and fruits like apples, for example. Sweet apples and tart cranberries complement each other really well. I guess you will agree with me if you make this Cranberry Apple Crumble ;)

    If you are interested in cranberry recipes you actually do not have to use the search here – I already got some delicious recipes with those berries here for you. The Apple & Cranberry Pie is a must-bake for sure. The rest is also very nice ;)

    Apple Pecan Cranberry Streusel Cake

    Cranberry Marzipan Poppy Seed Stollen

    INGREDIENTS / ZUTATEN

    (4-5 servings)

    For the filling:
    7 oz. (200g) fresh cranberries
    1 large apple, diced
    1 tbsp. lemon juice
    2 tbsp. raw cane sugar (or xylitol)

    For the streusels:
    3.5 oz. (100g) spelt flour
    2.5 oz. (70g) raw cane sugar (or xylitol)
    1/4 tsp. salt
    1/4 tsp. cinnamon
    2.8 oz. (80g) cold butter
    2.8 oz. (80g) rolled oats

    (4-5 Portionen)

    Für die Füllung:
    200g frische Cranberries
    1 großer Apfel, gewürfelt
    1 EL Zitronensaft
    2 EL Rohrohrzucker (oder Xylit)

    Für die Streusel:
    100g Dinkelmehl (Type 630)
    70g Rohrohrzucker (oder Xylit)
    1/4 TL Salz
    1/4 TL Zimt
    80g kalte Butter
    80g kernige Haferflocken

    DIRECTIONS / ZUBEREITUNG

    1. Wash the cranberries and remove any leaves or little stems. Peel the apple (if you like), quarter, core, and cut into small cubes. Add both to a baking dish, mix with lemon juice and sugar (or xylitol) and set aside.

    2. Preheat the oven to 390°F (200°C). Mix the spelt flour with sugar (or xylitol), salt, and cinnamon in a bowl. Add the cold butter in small pieces and mix everything with your fingers until you get different-sized streusels. Add the rolled oats and mix everything well. Transfer to the baking dish and distribute evenly on top. Bake for about 30-40 minutes until the streusels got a nice color and some of the liquid of the fruits has bubbled up. Remove from the oven, let cool down, then serve with whipped cream, vanilla sauce, or some ice cream.

    1. Die Cranberries waschen und auslesen. Den Apfel nach belieben schälen, vierteln, entkernen und dann in kleine Würfel schneiden. Beides in eine Auflaufform geben, mit Zitronensaft und Zucker (oder Xylit) vermischen und zur Seite stellen.

    2. Den Ofen auf 200°C (390°F) Ober-/Unterhitze vorheizen. Dinkelmehl mit Zucker (oder Xylit), Salz und Zimt in einer Schüssel vermischen. Die kalte Butter in kleinen Stücken dazugeben und dann alles mit den Fingern zu Streuseln verarbeiten. Die Haferflocken dazugeben und alles gut vermengen. Die Streuselmischung auf die Früchte geben und dann im vorgeheizten Ofen für etwa 30-40 Minuten backen. Die Steusel sollten schön Farbe bekommen haben und die Flüssigkeit der Früchte hier und da schön aufgeblubbert sein. Aus dem Ofen holen, abkühlen lassen, dann mit Sahne, Vanillesoße oder Eis servieren.
