Description

Ingredients

For the filling:
7 oz. (200g) fresh cranberries
1 large apple, diced
1 tbsp. lemon juice
2 tbsp. raw cane sugar (or xylitol)

For the streusels:
3.5 oz. (100g) spelt flour
2.5 oz. (70g) raw cane sugar (or xylitol)
1/4 tsp. salt
1/4 tsp. cinnamon
2.8 oz. (80g) cold butter
2.8 oz. (80g) rolled oats


Instructions

1. Wash the cranberries and remove any leaves or little stems. Peel the apple (if you like), quarter, core, and cut into small cubes. Add both to a baking dish, mix with lemon juice and sugar (or xylitol) and set aside.

2. Preheat the oven to 390°F (200°C). Mix the spelt flour with sugar (or xylitol), salt, and cinnamon in a bowl. Add the cold butter in small pieces and mix everything with your fingers until you get different-sized streusels. Add the rolled oats and mix everything well. Transfer to the baking dish and distribute evenly on top. Bake for about 30-40 minutes until the streusels got a nice color and some of the liquid of the fruits has bubbled up. Remove from the oven, let cool down, then serve with whipped cream, vanilla sauce, or some ice cream.
