Apple Pie Streusel Muffins

    Muffins are the “boring” siblings of cupcakes, some people say. This is, of course, absolute nonsense ;) Apple Pie Streusel Muffins like these here are super delicious and can easily compete with any decorated cupcake… At least that’s what I think. If you have a different opinion here, you better go to the back of the room in that corner to your left and think about what’s wrong with you… just kidding! You can think about it right where you are sitting/standing ;P

    Late summer and fall are apple season here in Germany – and probably in many other places around the world. You get fresh apples from local farmers everywhere now. Not the stuff you get all year round that has been sitting in a dark storehouse for months – right now everything is fresh! A few years ago I visited a farm with thousands of apple trees and had the chance to see how they harvest the apples and what they do with them to get them ready for sale. It is amazing how long apples can be stored. It can take up to a year until the last apples of the season end up in supermarkets. Would be great if all fruits and veggies stay fresh for that long ;)

    Anyway. Fresh apples are available everywhere now, so let’s do something. Baking or cooking – apples can be used in many different ways! A classic bake I love since I was a kid is an Apple Cake Tray Bake – that reminds me so much of my childhood! It’s a great bake if you want to feed a large crowd, but in case you don’t have a soccer team to feed, you should definitely take a look at these Apple Pie Streusel Muffins here. They are packed with delicious apples, which makes them moist and juicy – in combination with the crunchy streusel topping…. soo yummy! You will see!

    Good Old Apple Pie – Simply the Best!


    Invisible Apple Cake aka. Gateau Invisible aux Pommes


    Apple Strudel Cake (with Filo Dough)

    INGREDIENTS / ZUTATEN

    • English
    • Deutsch
    (12 muffins)

    For the Streusel:
    1/2 cup (60g) all-purpose flour
    1 oz. (30g) brown sugar
    pinch of ground cinnamon
    1 oz. (30g) butter, melted
    2 tbsp. rolled oats

    For the batter:
    2 medium-sized apples
    1 tsp. fresh lemon juice
    1/2 cup (120g) butter
    1/2 cup (100g) sugar
    1/4 cup (50g) brown sugar
    2 large eggs
    1/2 tsp. vanilla extract
    2 cups (260g) all-purpose flour
    2 tsp. baking powder
    1/2 tsp. ground cinnamon
    1/4 tsp. salt
    1/2 cup (120ml) milk

    confectioners’ sugar for dusting (optional)

    (12 Muffins)

    Für die Streusel:
    60g Mehl (Type 550)
    30g brauner Zucker
    1 Prise Zimt
    30g Butter, geschmolzen
    2 EL Haferflocken

    Für den Teig:
    2 mittelgroße Äpfel
    1 TL Zitronensaft
    120g Butter
    100g Zucker
    50g brauner Zucker
    2 Eier (L)
    1/2 TL Vanille Extrakt
    260g Mehl (Type 550)
    2 TL Backpulver
    1/2 TL Zimt
    1/4 TL Salz
    120ml Milch

    Puderzucker zum Bestreuen (optional)

    DIRECTIONS / ZUBEREITUNG

    1. Melt the butter for the streusel and let cool down again. Mix the flour, sugar, and cinnamon in a bowl, add the melted butter and mix with a fork until streusel. Add the rolled oats and mix in. Place in the fridge until needed.

    2. Preheat the oven to 350°F (180°F). Line a muffin tin with paper liners and set aside. Peel, quarter, and core the apples. Cut some of the apple pieces into 24 thin slices for the decoration, cut the remaining apples into small dices. Drizzle with the lemon juice and set aside.

    3. Add the butter and the sugars to a large bowl and mix on high speed until light and fluffy. Add the eggs one at a time and mix until well combined. Add the vanilla extract and mix in. Mix the flour with baking powder, ground cinnamon, and salt and add with the milk to the bowl – mix on low speed until just combined – do not overmix. Add the diced apples and fold in. Divide the batter between the paper liners, sprinkle with the streusel and add two apple slices on top of each muffin, press a bit into the dough if necessary. Bake for 26-30 minutes until the streusel got a nice golden color or until a wooden skewer inserted into the center of a muffin comes out clean. Take out of the oven and let cool down completely on a wire rack. Dust with some confectioners’ sugar before serving (optional).

    1. Die Butter für die Streusel schmelzen und wieder etwas abkühlen lassen. Mehl, Zucker und Zimt in einer Schüssel mischen und dann die geschmolzene Butter dazugeben – alles mit einer Gabel zu Streuseln verarbeiten. Die Haferflocken dazugeben und vermischen. Bis zur weiteren Verarbeitung in den Kühlschrank stellen.

    2. Den Ofen auf 180°C (350°F) vorheizen. Ein Muffinblech mit Papierförmchen bestücken und zur Seite stellen. Die Äpfel schälen, vierteln und die Kerngehäuse entfernen. Für die Dekoration 24 dünne Scheiben abschneiden, den Rest in kleine Würfel schneiden. Mit etwas Zitronensaft beträufeln und zur Seite stellen.

    3. Die Butter und die beiden Zuckersorten für den Teig in eine große Schüssel geben und auf höchster Stufe hell und luftig aufschlagen. Die Eier einzeln dazugeben und jeweils gut unterrühren. Vanille Extrakt dazugeben und unterrühren. Das Mehl mit Backpulver, Zimt und Salz vermischen und dann zusammen mit der Milch zur Schüssel dazugeben und auf niedriger Stufe nur kurz verrühren. Die Apfelstücke dazugeben und unterheben. Den Teig gleichmäßig auf die Papierförmchen verteilen, mit den Streuseln bestreuen und dann jeweils zwei Apfelscheiben auf die Muffins setzen und ggf. etwas in den Teig drücken. Für 26-30 Minuten backen, bis die Streusel eine schöne Farbe bekommen haben. Mit einem Zahnstocher testen ob noch Teig kleben bleibt und die Muffins erst herausholen, wenn dieser sauber herauskommt. Fertige Muffins aus dem Ofen holen und auf einem Kuchengitter komplett abkühlen lassen. Nach Belieben mit etwas Puderzucker bestreuen (optional) und servieren.
