Description

An apple a day keeps the doctor away – so do these delicious Apple Pie Streusel Muffins!


Ingredients

For the Streusel:
1/2 cup (60g) all-purpose flour
1 oz. (30g) brown sugar
pinch of ground cinnamon
1 oz. (30g) butter, melted
2 tbsp. rolled oats
For the batter:
2 medium-sized apples
1 tsp. fresh lemon juice
1/2 cup (120g) butter
1/2 cup (100g) sugar
1/4 cup (50g) brown sugar
2 large eggs
1/2 tsp. vanilla extract
2 cups (260g) all-purpose flour
2 tsp. baking powder
1/2 tsp. ground cinnamon
1/4 tsp. salt
1/2 cup (120ml) milk
confectioners’ sugar for dusting (optional)

Instructions

1. Melt the butter for the streusel and let cool down again. Mix the flour, sugar, and cinnamon in a bowl, add the melted butter and mix with a fork until streusel. Add the rolled oats and mix in. Place in the fridge until needed.
 
2. Preheat the oven to 350°F (180°F). Line a muffin tin with paper liners and set aside. Peel, quarter, and core the apples. Cut some of the apple pieces into 24 thin slices for the decoration, cut the remaining apples into small dices. Drizzle with the lemon juice and set aside.
 
3. Add the butter and the sugars to a large bowl and mix on high speed until light and fluffy. Add the eggs one at a time and mix until well combined. Add the vanilla extract and mix in. Mix the flour with baking powder, ground cinnamon, and salt and add with the milk to the bowl – mix on low speed until just combined – do not overmix. Add the diced apples and fold in. Divide the batter between the paper liners, sprinkle with the streusel and add two apple slices on top of each muffin, press a bit into the dough if necessary. Bake for 26-30 minutes until the streusel got a nice golden color or until a wooden skewer inserted into the center of a muffin comes out clean. Take out of the oven and let cool down completely on a wire rack. Dust with some confectioners’ sugar before serving (optional).
