Oven Veggies with Halloumi

    Today I got more than one recipe for you… well, kind of. Only if you are willing to read recipes in German or know how to use Google Translator ;P Some bloggers and I created a little collection for easy recipes – all easy to prepare on a baking sheet in the oven. We call it “Fix vom Blech” here in Germany. Anyway – these Oven Veggies with Halloumi are my contribution to this little ist of delicious recipes… sorry, no cake. Again ;)

    The Covid lockdown gave many of us the chance to work from home – or better said forced us to do so ;) Instead of eating in a canteen, or getting something to eat on the way to or from work, many are now forced to cook something for themselves. Sure, there are still food delivery services out there, but that is something you can’t do forever. At some point, you have to look for alternatives ;)

    If you believe the German media, there are many people who are already overwhelmed with cooking potatoes – I don’t think that is the case. I mean if you have a stove, a pot of water, and potatoes you can cook potatoes ;) They might not turn out the best if you do it for the first time, but if you are willing to learn a bit, you will master this “difficult” task. Someday ;P

    I think the real problem is laziness. I don’t exclude myself here. We all became quite comfortable when it comes to cooking. If you are used to getting breakfast at the bakery on the way to work and eat somewhere in a restaurant during your lunch break, it might be challenging for you in a lockdown situation at home. All meals for the day have to be prepared if you don’t want to live on crackers and tap water ;P I really enjoy cooking and baking myself, but I’m also very happy when I don’t have to do anything and someone is serving me food I like. That’s how it is.

    Well… back to our topic. Today is about simple dishes. Something you can prepare easily whatever “cooking level” you are able to master and without “wasting” too much time (not that you save a lot of time working from home, but hey…). Simple dishes from a baking tray. The one-pot dishes for the oven some would say. Easy peasy and better than pasta with store-bought tomato sauce ;P

    We are preparing oven veggies like these here quite often in our home – not only since we are stuck at home. If you don’t have much energy left for cooking after work, oven vegetables are the perfect dish. We always chop more veggies than we actually need for dinner – when you are already peeling and slicing, it doesn’t really matter whether you do the double or triple amount of veggies – it’s not much more time once you started. The “overproduction” can be stored in an airtight container in the fridge and you can enjoy veggies for several days of the week if you want.

    We like to throw some Halloumi on the veggies when making this dish, but you can also use other “toppings” to make the dish more appealing for you (in case you want meat for dinner). Marinated chicken can be cooked together with the veggies, small sausages or meatballs – everything that is cooked through within the baking time (you need for the veggies) can be bake along with the veggies.

    Well… as mentioned at the beginning – there are more recipes like this one here waiting for you if you are willing to read German recipes. Unfortunately, my blogger colleagues hardly offer English recipes – so if you speak German or know how to use Google Translate… go for it! ;) There are some nice recipes so you might wanna check…

    INGREDIENTS / ZUTATEN

    • English
    • Deutsch

    (2-3 servings)

    For the oven veggies:
    1-2 small onions
    2-3 garlic cloves
    1-2 carrots
    1-2 small parsnip
    1 small zucchini
    2-3 medium-sized potatoes
    1 red beet
    2 tbsp. olive oil (plus some more)
    granulated garlic
    granulated onion
    paprika powder
    salt, pepper
    9 oz. (250g) halloumi
    rosemary branches (optional)
    4-5 small tomatoes

    For the yogurt sauce:
    7 oz. (200g) yogurt
    zest of 1/2 organic lemon
    2 tbsp. lemon juice
    salt, pepper

    (2-3 Portionen)

    Für das Ofengemüse:
    1-2 kleine Zwiebeln
    2-3 Knoblauchzehen
    1-2 Karotten
    1-2 kleine Pastinaken
    1 kleine Zucchini
    2-3 mittelgroße Kartoffeln
    1 Rote Bete
    2 EL Olivenöl (plus etwas mehr)
    granulierten Knoblauch
    granulierte Zwiebeln
    Paprikapulver
    Salz, Pfeffer
    250g Halloumi
    Rosmarinzweige (optional)
    4-5 kleine Tomaten

    Für die Joghurt Sauce:
    200g Joghurt
    Abrieb von 1/2 Bio-Zitrone
    2 EL Zitronensaft
    Salz, Pfeffer

    DIRECTIONS / ZUBEREITUNG

    1. Preheat the oven to 390°F (200°C). Line a baking sheet with baking parchment and set aside. Peel the onion and garlic – cut the onion into wedges and the garlic into slices. Peel the carrot and parsnip and cut into slices. Wash the zucchini and cut into dices. Peel the potatoes and dice as well (don’t make the pieces too big). Peel the red beet and cut into dices – you should use gloves here or your hands will be red/purple… Set the red beet aside and mix the other veggies in a large bowl. Add the oil to the bowl, as well as the granulated garlic and onion, paprika powder, some salt and pepper to season the veggies. Mix well and then transfer to the prepared baking sheet and spread evenly. Add the red beet as well. Place in the oven and bake for 15 minutes.

    2. While the veggies are roasting in the oven cut the Halloumi into thick slices. Brush with some oil and season with salt and pepper. Wash and dry the tomatoes. As soon as the time is up, add the Halloumi, tomatoes, and rosemary (optional) to the baking sheet and continue baking for 15-20 minutes until the veggies are done. The time varies depending on the cut of the veggies. Take out of the oven and transfer to serving plates.

    3. For the yogurt sauce mix all the ingredients in a small bowl and season with salt, and pepper to your liking. Serve along with the veggies and Halloumi.

    Note: If you like your Halloumi fried and more crunchy leave it out of the oven and fry it in a frying or griddle pan instead.

    1. Den Ofen auf 200°C (390°F) Ober-/Unterhitze vorheizen. Ein Backblech mit Backpapier auslegen und zur Seite stellen. Die Zwiebel und Knoblauchzehen schälen – die Zwiebel in Spalten schneiden und die Knoblauchzehen in Scheiben. Karotten und Pastinaken schälen und in Scheiben schneiden. Zucchini waschen und in Würfel schneiden. Kartoffeln schälen und ebenfalls in (nicht zu große) Würfel schneiden. Rote Bete schälen (am besten Gummihandschuhe verwenden) und würfeln. Die Rote Bete zur Seite stellen und den Rest in einer großen Schüssel vermischen. Das Öl in die Schüssel geben und mit granuliertem Knoblauch, Zwiebeln, Paprikapulver, Salz und Pfeffer gut würzen und alles gut vermischen. Das Gemüse gleichmäßig auf dem Backblech verteilen. Die Rote Bete jetzt ebenfalls dazugeben. Das Blech in den Ofen schieben und für etwa 15 Minuten backen/rösten.

    2. Während das Gemüse röstet, den Halloumi in Scheiben schneiden, mit Öl bestreichen und mit etwas Salz und Pfeffer würzen. Die Tomaten waschen abtropfen lassen. Wenn die Backzeit um ist, das Blech herausholen und die Halloumischeiben und Tomaten auf das Gemüse setzen. Rosmarin dazulegen (optional) und für weitere 15-20 Minuten backen/rösten – die Zeit hängt davon ab, wie groß/klein man das Gemüse geschnitten hat und wie schnell es jeweils gart. Wenn alles durchgegart und bissfest ist, aus dem Ofen holen und auf Tellern verteilen.

    3. Für die Joghurtsoße alle Zutaten in eine kleine Schüssel geben und verrühren, mit Salz und Pfeffer abschmecken und dann zum Gemüse und dem Halloumi dazu servieren.

    Hinweis: Wer den Halloumi etwas krosser bzw. angebraten mag, der kann ihn auch statt im Ofen kurz scharf in einer Pfanne mit etwas Öl rundum anbraten.

    Ingredients

    For the oven veggies:
