Thanks to the Olympics ’24, the good old chocolate muffin has gone viral for some time and has fully embraced its 15 minutes of fame. However, that’s not the reason why I love baking these Double Chocolate Zucchini Muffins so much – they have a lot of loyal fans here for a quite a while already. As soon as these muffins come out of the oven, you have to be careful… they might disappear instantly ;P
When zucchini are in season and the harvest was good, you can often get those green fellas quite cheaply in supermarkets or at the weekly farmer’s market. So if you are on a budget or don’t want to spend a lot, zucchini might be the perfect veggie for you to prepare dinner. This delicious Zucchini & Potato Casserole can be your main course or served as a side with some meat, fish, etc.
If you got a garden and have planted zucchini once, you may be familiar with the problem that at some point in summer, it feels like all of your zucchini plants are packed with fruits at the same time. Enough to feed a whole soccer team ;P In cases like that, it’s good to have recipes at hand to use all those zucchini. Something like this delicious Zucchini Lime Cake with Cream Cheese Frosting. Ideal to get rid of some of these green fellas ;P
As summer gets into full swing, there are more and more fruits and veggies available at the local farmer’s market from local sources. If you’re lucky to have a garden, you don’t need a farmer’s market – with a reasonably green thumb, you can grow many things yourself. The veggies for this simple Ratatouille Tart are easy to grow in your own garden – even in Germany with our colder temperatures sometimes in summer ;) Maybe not right at the beginning of summer, but eventually everything is ready to harvest ;P
Zucchini Boats is a dish my mom often made when I was a kid. I liked the combination of the zucchini, rice, minced meat, and all that cheese on top a lot. The Zucchini Boats I made here today are equally delicious but made without any dairy products or meat. Thanks to “fake meat” (no fake news) and “fake cheese” you can still make something that gets very close to the original. Even the rice is “fake” because it’s actually spelt… ;P
The season for zucchini starts soon here in Germany – the ones we planted here on our balcony still need some time to get ready… but they are growing nicely so far. Several weeks and we can make this simple Zucchini Beef Skillet with homegrown zucchini I guess ;) Until then… let’s use the ones from the store. Shall we?
I love my job, but in between I love to bake and try new things in the kitchen. A lot of my friends and colleagues encourage me to bake - for a very simple reason: they get the leftovers - and it seems they like it most of the time ;)
