Homemade Fortune Cookies

    A brand new year is approaching – it could be good to know what is going to happen, right? We are all a bit curious about what the next year might bring. Instead of asking a psychic or trying to read tea leaves, you can make some Fortune Cookies and let them decide what’s coming up… and since you are the one making them and creating the messages, you are the one deciding what’s gonna happen ;P

    I really like Fortune Cookies for the New Year’s celebrations as a little surprise after dinner. Everybody reads the messages and since those messages tend to be a bit weird it can be a lot of fun. If you write your own messages it can get even better. You write personalized messages and had out the cookies to the persons – they will be quite surprised I assume ;)

    It is a really nice gag but to be honest making those cookies is quite a bit of work. You should probably make these cookies only for people you really like – based on the work that goes into each cookie ;)

    The dough is pretty easy to prepare – whisking here and there, mixing everything and you got a nice sweet batter for Fortune Cookies. The baking is the more tricky part here – you have to spread out the batter quite thinly to get crispy cookies. You have to find out the right baking time since it can vary quite a bit depending on your oven and how thinly the batter is spread. If you bake them not long enough, you will end up with soft cookies, if you bake ’em too long, the cookies tend to break when trying to shape them… it takes some time to practice. I tried several ways to make the cookies – baking on baking parchment, using some oil to keep them from sticking to the paper… I actually got the best result using a silicone baking mat, so you might want to try that too if you have one.

    If you have some practice you might be able to “just” spread out the dough, bake, and shape. I needed a step in between and use a cookie cutter to cut out the cookies and then finish them. You can also use a knife or scissors to get the cookies into shape. Whatever works best for you. Just keep in mind you have to work quickly here – the longer they are out of the oven the more they harden and tend to break more easily… that’s why you make only two at a time ;)

    You can color the dough if you like or dip the dried cookies into chocolate and decorate them with some sprinkles or nuts… but then you will probably not be able to fool anybody and tell them you bought them – everybody will know you made them yourself ;)

    INGREDIENTS / ZUTATEN

    2.1 oz. (60g) egg white
    3 tbsp. sunflower oil
    2.1 oz. (60g) all-purpose flour
    3.5 oz. (100g) sugar
    1 tbsp. vanilla sugar
    1 1/2 tsp. cornstarch
    1/4 tsp. salt
    4 tbsp. water

    about 20 messages (about 2×0.6 inches)

    (ca. 20 Kekse)

    60g Eiweiß
    3 EL Pflanzenöl
    60g Mehl (Type 550)
    100g Zucker
    1 EL Vanillezucker
    1 1/2 TL Speisestärke
    1/4 TL Salz
    4 EL Wasser

    ca. 20 Zettel mit Sprüchen (ca.5×1,5cm)

    DIRECTIONS / ZUBEREITUNG

    1. Create the little messages on paper to go into the cookies – either created with a computer and printed or by hand.

    2. Preheat the oven to 390°F (200°C). Line a baking sheet with a silicone baking mat* and set aside. Place the things you need on your working space: a muffin tin*, a cutting board, a dough scraper* or metal spatula* and a round cookie cutter* (about Ø 3.5 inches).

    3. Whisk the egg whites with the oil in a bowl until foamy. Set aside. Add the flour, sugar, vanilla sugar, cornstarch, and salt to a second bowl and mix until well combined. Add the water and mix until you get a thick batter. Add the egg white mix and fold in to get a more runny batter.

    4. Use a spoon to place two portions of batter (about 1 1/2-2 tablespoons each) on the baking mat and spread out with the back of the spoon to create (only) two rounds of about 3.5 inches (9cm) in diameter – the batter should be spread out quite thin. Bake for 5 1/2-6 minutes until the edges got some color. Take out of the oven and immediately use the cookie cutter to cut out rounds. Remove from the baking mat with the dough scraper or spatula and place it on the cutting board. If there are still some pieces of the edge that did not come off by using the cookie cutter, remove them with a knife or scissor. Place a little paper on top of the dough round and fold in the middle to create a semicircle – the side of the dough round that was facing up while baking should be on the outside now. Press the edges together and bend into the shape of a fortune cookie. You can also achieve this by pressing the semicircle on a cup or glass. Place the cookies in the molds of the muffin tin so they keep their shape while drying/cooling down – that takes several hours. Repeat with the remaining dough.

    1. Als erstes die Zettel mit Sprüchen gestalten, die in die Cookies kommen – das kann man am Rechner machen und ausdrucken oder per Hand schreiben.

    2. Den Ofen auf 200°C (390°F) vorheizen. Ein Backblech mit einer Silikon-Backmatte* auslegen und zur Seite stellen. Ein Muffinblech*, ein Brett, einen Teigschaber*, oder Backpalette* und einen runden Ausstecher* (ca. Ø 9cm) bereitstellen.

    3. Das Eiweiß mit dem Öl in eine Schüssel geben und schaumig aufschlagen. Zur Seite stellen. Mehl, Zucker, Vanillezucker, Stärke und Salz in einer zweiten Schüssel vermischen, dann das Wasser dazugeben und gut verrühren. Das aufgeschlagene Eiweiß dazugeben und unterrühren – der Teig wird recht dünnflüssig sein.

    4. Mit einem Esslöffel (pro Durchgang) zwei Teigportionen (jeweils etwa 1 1/2-2 EL Teig) auf die Backmatte geben und mit der Rückseite des Löffels zu Kreisen mit einem Durchmesser von etwa 9cm (3.5 inches) ausstreichen – der Teig sollte dabei recht dünn verteilt sein. Für 5 1/2-6 Minuten backen, bis die Ränder leicht gebräunt sind. Aus dem Ofen holen und sofort mit dem Ausstecher die Kreise “zurechtstutzen”, damit saubere Ränder entstehen. Mit dem Teigschaber oder der Palette die Kreise von der Backmatte lösen und auf das Brett legen – Reste der Ränder, die ggf. nicht abgefallen sind beim Ausstechen, mit einem Messer oder einer Schere abschneiden. Sofort die Zettelchen in die Mitte der Kreise legen und zu Halbkreisen zusammenfalten – die Seite, die beim Backen oben war, sollte hier nach Außen zeigen. Die Ränder etwas zusammendrücken und dann in die typische Glückskeks-Form drücken, mit dem Knick in der Mitte. Funktioniert auch gut, wenn man die Teig-Halbkreise auf den Rand einer Tasse drückt. Zum Trocknen/Festwerden in das Muffinblech setzen, damit sie ihre Form behalten. Mit dem restlichen Teig wiederholen. Die Glückskekse mehrere Stunden trocknen lassen.
