Ingredients

2.1 oz. (60g) egg white
3 tbsp. sunflower oil
2.1 oz. (60g) all-purpose flour
3.5 oz. (100g) sugar
1 tbsp. vanilla sugar
1 1/2 tsp. cornstarch
1/4 tsp. salt
4 tbsp. water
about 20 messages (about 2×0.6 inches)

Instructions

1. Create the little messages on paper to go into the cookies – either created with a computer and printed or by hand.

2. Preheat the oven to 390°F (200°C). Line a baking sheet with a silicone baking mat* and set aside. Place the things you need on your working space: a muffin tin*, a cutting board, a dough scraper* or metal spatula* and a round cookie cutter* (about Ø 3.5 inches).

3. Whisk the egg whites with the oil in a bowl until foamy. Set aside. Add the flour, sugar, vanilla sugar, cornstarch, and salt to a second bowl and mix until well combined. Add the water and mix until you get a thick batter. Add the egg white mix and fold in to get a more runny batter.

4. Use a spoon to place two portions of batter (about 1 1/2-2 tablespoons each) on the baking mat and spread out with the back of the spoon to create (only) two rounds of about 3.5 inches (9cm) in diameter – the batter should be spread out quite thin. Bake for 5 1/2-6 minutes until the edges got some color. Take out of the oven and immediately use the cookie cutter to cut out rounds. Remove from the baking mat with the dough scraper or spatula and place it on the cutting board. If there are still some pieces of the edge that did not come off by using the cookie cutter, remove them with a knife or scissor. Place a little paper on top of the dough round and fold in the middle to create a semicircle – the side of the dough round that was facing up while baking should be on the outside now. Press the edges together and bend into the shape of a fortune cookie. You can also achieve this by pressing the semicircle on a cup or glass. Place the cookies in the molds of the muffin tin so they keep their shape while drying/cooling down – that takes several hours. Repeat with the remaining dough.
