Today is not a day for cakes or cupcakes. Today is a day for burgers! It’s National Burger Day and because of that, I made some burgers! D’oh!! I am not kidding. If you expected a new sweet recipe you have to wait a couple more days. The only thing you will get here today are delicious Halloumi Veggie Burgers with Brava Sauce! Well and some chips on the side if you want.

Yeah, it is one of those days again: a foodie holiday! Someone decided to make August 27th the day of the burger – which means you will probably see a lot of burgers today in the news, social media, and, of course on food blogs. I have no clue whose decision it was to make this day a burger day. A big burger fan I assume, or someone from the meat-producing lobby, most likely. Who cares?! Let’s celebrate the (US) National Burger Day!
I assume most people think this day would/should be celebrated with a burger that is made with a ground beef patty. A big juicy one! I decided to go with the veggie/cheesy option here. We are not having burgers that often anymore but whenever it’s burger time, we actually prefer burgers with vegan/plant-based patties or just grilled veggies and halloumi… like the burger I made today. Dunno why. I actually like meat, but burgers without meat are also nice and there are so many options nowadays. All those vegan burger patties you can get lately. No need to do meat.

For a veggie burger, you can use basically everything from eggplants to zucchini – use whatever you like the most. I think you can put almost everything on a grill – even salad. They all work fine with the halloumi and the brava sauce. Which is, by the way, one of the key ingredients here. Without it you only have veggies and cheese on a bun. The brava sauce makes it a delicious veggie halloumi burger.
Well… if you are too lazy to make the brava sauce yourself, you can use some other hot sauce, of course. It will not be the same experience, though, of course. With brava sauce, everything is much better! Patatas Bravas with Aioli is one of my favorite tapas dishes. We love it. Using the sauce in other dishes was one of the best decisions I made in my life, so you should probably try too!
INGREDIENTS / ZUTATEN
(4 burgers)
For the brava sauce:
3 tbsp. olive oil
1/2 onion, finely chopped
2 garlic cloves, finely chopped
8.8 oz. (250g) tomato passata*
some pimentón dulce ahumado*
some cayenne pepper* or chili powder*
some salt
For the burgers:
2 red peppers
1 medium-sized zucchini
4 lage white mushrooms
8.8 oz. (250g) halloumi cheese*
some olive oil
1 red onion
4 brioche burger buns*
(4 Burger)
Für die Brava Soße:
3 EL Olivenöl
1/2 rote Zwiebel, fein gehackt
2 Knoblauchzehen, fein gehackt
250g passierte Tomaten*
etwas Pimentón Dulce Ahumado*
etwas Cayennepfeffer* oder Chilipulver*
etwas Salz
Für die Burger:
2 rote Paprika
1 mittelgroße Zucchini
4 große Champignons
250g Halloumi*
etwas Olivenöl
1 rote Zwiebel
4 Brioche Burger Buns*


DIRECTIONS / ZUBEREITUNG
1. For the brava sauce, add the oil to a saucepan and heat it up. Add the chopped onions and garlic and fry until soft and glossy – try not to burn it. Add the tomato passata and season with pimentón, pepper or chili powder and salt. Reduce the heat and let it simmer for 15-20 minutes.
2. Wash and dry the peppers, remove the seeds and quarter. Wash and dry the zucchini and cut it into not too thin slices. Clean the mushrooms and cut horizontally into 2-3 slices. Fry the veggies and mushrooms with some olive oil in a grilling pan or grill in a BBQ oven until nicely browned. Cut the halloumi into (not too thin) slices and fry/grill as well from both sides until done. Peel the onion and cut it into thin rings.
3. Cut the burger buns horizontally in half and warm them in the oven or heat them up a bit on the grill. To assemble the burger add some brava sauce on the bottom part of the bun, place halloumi, grilled veggies, mushrooms, and onion rings on top and drizzle with some more brava sauce, finish with the top part of the bun. Serve with some veggie chips or French fries.
1. Für die Brava Soße das Öl in einen Topf geben und erhitzen. Die gehackten Zwiebeln und den Knoblauch zugeben und anbraten, bis die Zwiebeln weich und glasig sind – dabei möglichst nicht verbrennen. Die passierten Tomaten dazugeben, mit Pimentón (Paprikapulver), Cayennepfeffer oder Chilipulver und Salz abschmecken. Hitzezufuhr reduzieren und alles für 15-20 Minuten leicht köcheln lassen.
2. Die Paprika waschen, trocknen, die Innereien entfernen und dann vierteln. Die Zucchini waschen, trocknen und in nicht zu dünne Scheiben schneiden. Die Champignons säubern und in je 2-3 Scheiben schneiden. Das Gemüse und die Pilze entweder in einer Grillpfanne mit etwas Öl oder auf dem Grill von beiden Seiten anbraten/grillen. Den Halloumi in nicht zu dünne Scheiben schneiden und ebenfalls von beiden Seiten anbraten/grillen. Die Zwiebel schälen und in dünne Ringe schneiden.
3. Die Burger Buns aufschneiden und entweder im Ofen erwärmen oder kurz mit auf den Grill legen. Die untere Hälfte des Burger Buns mit Brava Soße bestreichen und dann mit dem gegrillten Halloumi, gegrilltem Gemüse, Pilzen und den Zwiebelringen belegen. Noch etwas Brava Soße darüberträufeln und dann die oberen Hälften des Buns auflegen und mit Gemüsechips oder Pommes servieren.
