Halloumi Burger with Grilled Veggies and Brava Sauce

Description

Delicious veggie burger with juicy soft halloumi and grilled veggies – perfected with a Spanish brava sauce.


Ingredients

For the brava sauce:
3 tbsp. olive oil
1/2 onion, finely chopped
2 garlic cloves, finely chopped
8.8 oz. (250g) tomato passata
pimentón dulce ahumado
cayenne pepper or chili powder
salt
For the burgers:
2 red peppers
1 medium-sized zucchini
4 lage white mushrooms
250g halloumi cheese
some olive oil
1 red onion
4 brioche burger buns

Instructions

1. For the brava sauce add the oil to a saucepan and heat up. Add the chopped onions and garlic and fry until soft and glossy – try not to burn it. Add the tomato passata and season with pimentón, pepper or chili powder and salt. Reduce the heat and let simmer for 15-20 minutes.
 
2. Wash and dry the peppers, remove the seeds and quarter. Wash and dry the zucchini and cut into not too thin slices. Clean the mushrooms and cut horizontally into 2-3 slices. Fry the veggies and mushrooms with some olive oil in a grilling pan or grill in a bbq oven until nicely browned. Cut the halloumi into (not too thin) slices and fry/grill as well from both sides until done. Peel the onion and cut into thin rings.
 
3. Cut the burger buns horizontally in half and warm in the oven or heat up a bit on the grill. To assemble the burger add some brava sauce on the bottom part of the bun, place halloumi, grilled veggies, mushrooms and onion rings on top and drizzle with some more brava sauce, finish with the top part of the bun. Serve with some veggie chips or French fries.
