You can already find quite a few apple cake and »apple cake adjacent« recipes here on the blog. Enough to fill a whole cooking book I think. Unfortunately, there are no plans to publish a book like that at the moment, but it would be a nice thing to have, right? ;P Well… this Easy Peasy (Sunken) Apple Cake is just another addition to the list of recipes where apples are the stars. A really delicious addition I think.
We Germans like apple cakes. Every region, from the Alps to way up north, has a lot of traditional apple cake recipes. Sometimes quite different. This one here is a more simple version where the apples sink into the dough during baking. Other apple cakes have a pastry layer on top or a meringue topping, for example. Others are made with a custard filling or sour cream filling… a lot of options to choose from ;)

This recipe here is a slightly »more rustic« version of that cake that has been on the blog for several years now. The new one is a bit smaller, compacter and got more spices added. If you are not sure what to choose, I recommend baking both ;P
Cinnamon, cardamom, and muscovado sugar add a lot of flavors to this apple cake. I would describe the flavors with warm and caramelized – though I doubt you can »caramelize« a flavor ;P Anyway. You should not ignore the apples, of course. They are the stars in every apple cake. A slice of a slightly warm apple cake… it’s the best. Add some vanilla sauce or vanilla ice cream and you get a super delicious dessert.
This sunken apple cake here may not be the prettiest cake you can bake and will probably never win a beauty contest. But as mom always said: it’s what’s on the inside that counts… and that’s definitely the case here. Flavors, flavors, flavors ;)

INGREDIENTS / ZUTATEN
3/4 cup (180g) butter, at room temperature
3/4 cup (150g) muscovado sugar (plus extra for sprinkling)
3 medium eggs
2 cups (270g) all-purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. ground cinnamon
1/4 tsp. ground cardamom
2-3 medium apples
some (warmed) apricot jam for brushing
180g weiche Butter
150g Mascobado Zucker (plus etwas mehr zum Bestreuen)
3 Eier (M)
270g Mehl (Type 550)
2 TL Backpulver
1/2 TL Natron
1/2 TL Salz
1 TL Zimt
1/4 TL Kardamom
2-3 mittelgroße Äpfel
etwas (erwärmte) Aprikosenmarmelade zum Bestreichen
DIRECTIONS / ZUBEREITUNG
1. Preheat the oven to 375°F (190°C). Line an 8 inches (20cm) springform tin with baking parchment and grease lightly. Set aside.
2. Add the butter and sugar to a large bowl and mix until light and fluffy. Add the eggs, one at a time, and mix until well combined. Combine flour, baking powder, baking soda, Salt, cinnamon, and cardamom and add to the large bowl – mix until just combined. Transfer the batter to the prepared springform tin and spread out into one even layer.
3. Peel the apples, quarter, and core. Use a fork to scratch lines into the apples and press the apple pieces into the batter. Bake the cake for about 60-75 minutes or until a wooden skewer inserted into the center of the cake comes out clean. Take out of the oven and let cool down for a moment, then brush with some warmed apricot jam and sprinkle with some additional sugar. Let cool down a bit further before serving.
1. Den Ofen auf 190°C (375°F) Ober-/Unterhitze vorheizen. Eine 20cm Springform mit Backpapier auslegen und leicht einfetten. Zur Seite stellen.
2. Die Butter und den Zucker in eine große Schüssel geben und hell und luftig aufschlagen. Die Eier einzeln dazugeben und jeweils gut unterrühren. Mehl, Backpulver, Natron, Salz, Zimt und Kardamom vermischen und dann zur großen Schüssel dazugeben – alles nur kurz vermengen. Den Teig in die vorbereitete Form füllen und glatt streichen.
3. Die Äpfel schälen, vierteln und entkernen. Mit einer Gabel Linien in die Äpfel ritzen und die Apfelstücke dann in den Teig drücken. Den Kuchen für etwa 60-75 Minuten backen. Mit einem Holzspieß testen, ob noch Teig kleben bleibt und den Kuchen erst herausholen, wenn dieser sauber herauskommt. Kuchen aus dem Ofen nehmen und ein wenig abkühlen lassen, dann mit erwärmter Aprikosenmarmelade bestreichen und mit etwas Zucker bestreuen. Bis zum Servieren noch etwas weiter abkühlen lassen.
