Description

Simple and easy to prepare – this Easy Peasy Apple Cake is not only quick on the table but also very delicious! All you want from a cake ;)


Ingredients

Scale

3/4 cup (180g) butter, at room temperature
3/4 cup (150g) muscovado sugar (plus extra for sprinkling)
3 medium eggs
2 cups (270g) all-purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. ground cinnamon
1/4 tsp. ground cardamom
23 medium apples

some (warmed) apricot jam for brushing


Instructions

1. Preheat the oven to 375°F (190°C). Line an 8 inches (20cm) springform tin with baking parchment and grease lightly. Set aside.

2. Add the butter and sugar to a large bowl and mix until light and fluffy. Add the eggs, one at a time, and mix until well combined. Combine flour, baking powder, baking soda, Salt, cinnamon, and cardamom and add to the large bowl – mix until just combined. Transfer the batter to the prepared springform tin and spread out into one even layer.

3. Peel the apples, quarter, and core. Use a fork to scratch lines into the apples and press the apple pieces into the batter. Bake the cake for about 60-75 minutes or until a wooden skewer inserted into the center of the cake comes out clean. Take out of the oven and let cool down for a moment, then brush with some warmed apricot jam and sprinkle with some additional sugar. Let cool down a bit further before serving.
