Simple Apple Pie Scones

    Quick and easy? I can do that too. Occasionally. It doesn’t always have to be a three-layer chocolate cake for me. A quick recipe now and then definitely has its advantages. These delicious Apple Pie Scones are mixed together in no time, baked in an instant, and probably devoured just as quickly (because they’re so incredibly delicious). Sometimes things in life are so simple…

    Anything that even remotely resembles an apple pie wins me over instantly. Just the smell that comes out of the oven when something with apples is being baked. Simply delicious! It’s no different with these apple pie scones here. The apple and cinnamon aroma rises after just a few minutes, and from then on, my mouth starts watering. Pavlovian instincts at work.

    Anyone who is familiar with scones will probably know that they’re practically foolproof. You can’t really go wrong when baking scones. Except perhaps baking them for too long. Then most scones become dry. Like any other baked good. For this reason, you should definitely stick to the baking times in the recipe!

    Since these scones contain quite a lot of apples, the risk of them turning out super dry is relatively low. The apples release a good amount of moisture while being baked. If you like, you can also add some raisins – they go well with apples. Unfortunately, I had to leave them out because not everyone in my family likes raisins *cough*. I’m not the one who has a problem with them. Just so you know. I am the innocent here.

    Otherwise, there’s not much more to say about the recipe and the baking process. Mix everything together, plop the dough on the work surface, and shape it into a disc… Then cut it into triangles like a pizza and pop them in the oven. A little cream and brown sugar give the scones the perfect, crispy surface that makes them so special. The finished scones can be enjoyed as they are – but if you prefer them a little sweeter, you can drizzle some sugar icing over them, of course. With a little added cinnamon it gets even better!

    INGREDIENTS / ZUTATEN

    (6 scones)

    For the scones:
    1 1/2 cups (200g) all-purpose flour*
    1/4 cup (50g) sugar (fine)*
    1 tsp. baking powder
    1/2 tsp. ground cinnamon*
    1/4 tsp. ground ginger*
    1/4 tsp. salt
    1/4 cup (60g) cold butter
    1 large egg
    1/4 cup (70g) applesauce (unsweetened)*
    1/2 tsp. vanilla extract*
    1 large apple, peeled and diced
    2-3 tbsp. brown sugar*

    For the glaze:
    1 cup (130g) confectioners’ sugar
    1/4 tsp. ground cinnamon*
    2-3 tbsp. heavy cream

    50g Zucker (fein)*
    1 TL Backpulver
    1/2 TL Zimt*, gemahlen
    1/4 TL Ingwer*, gemahlen
    1/4 TL Salz
    60g kalte Butter
    1 Ei (L)
    70g Apfelmus (ungesüßt)*
    1/2 TL Vanille Extrakt*
    1 großer Apfel, geschält und fein gewürfelt
    2-3 EL brauner Zucker*

    Für die Glasur:
    130g Puderzucker
    1/4 TL Zimt*, gemahlen
    2-3 EL Sahne

    DIRECTIONS / ZUBEREITUNG

    1. Peel and dice the apple finely. Mix the flour, sugar, baking powder, cinnamon, ground ginger and salt in a large bowl. Add the cold butter and cut with a pastry blender or knife into small pieces. Mix the egg with the apple sauce and vanilla extract and add to the bowl and mix with your fingers until the dough starts to come together. Add the diced apples and knead together until the dough almost holds together. Place in the fridge for about 10-15 minutes.

    2. Preheat the oven to 220°C (425°F). Line a baking sheet with Baking parchment. Place the dough on a floured surface and form a flat disc with approx. Ø 20cm. Cut like a pizza into 6 pieces and place those pieces on the baking sheet and sprinkle with the brown sugar. Bake for about 18-20 minutes until golden brown. Take them out of the oven and let them cool down on a wire rack.

    3. For the glaze, mix the confectioners’ sugar, cinnamon and heavy cream until smooth and then drizzle it over the scones and let it dry a bit.

    1. Den Apfel schälen und fein würfeln. Das Mehl mit dem Zucker, Backpulver, Zimt, Ingwer und Salz in einer großen Schüssel vermischen. Die Butter zugeben und mit einem Teigmischer oder Messer in kleine Stücke zerschneiden. Das Ei mit dem Apfelmus und Vanille Extrakt vermischen und dann zur Schüssel dazugeben, mit den Fingern einarbeiten, bis der Teig langsam anfängt zusammenzukleben. Die gewürfelten Apfelstücke dazugeben und so lange verkneten, bis der Teig fast komplett zusammenhält. Für etwa 10-15 Minuten in den Kühlschrank stellen.

    2. Den Ofen auf 220°C (425°F) Ober-/Unterhitze vorheizen. Ein Backblech mit Backpapier auslegen. Den Teig auf eine bemehlte Fläche legen und dann zu einer runden Scheibe mit einem Durchmesser von etwa 20cm formen. Mit einem Messer dann, wie eine Pizza, in 6 gleich große Stücke schneiden, auf das Blech legen und dann mit dem braunen Zucker bestreuen. Für etwa 18-20 Minuten backen, bis sie eine schöne goldene Farbe bekommen haben. Herausnehmen und auf einem Kuchengitter abkühlen lassen.

    3. Für die Glasur den Puderzucker mit dem Zimt und der Sahne glatt rühren und damit dann die Scones verzieren.

    A delicious snack that’s perfect along with a cup of hot tea or coffee: Apple Pie Scones! They are super easy to make and so good!


    Ingredients
