Description

Delicious snack along with your cup of hot tea or coffee: Apple Pie Scones!


Ingredients

For the scones

  • 1 1/2 cups (200g) all-purpose flour
  • 1/4 cup (50g) sugar
  • 1 tsp. baking powder
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground ginger
  • 1/4 tsp. salt
  • 1/4 cup (60g) cold butter
  • 1 large egg
  • 1/4 cup (70g) applesauce
  • 1/2 tsp. vanilla extract
  • 1 large apple, peeled and diced
  • 23 tbsp. brown sugar

For the glaze

  • 1 cup (130g) confectioners’ sugar
  • 1/4 tsp. ground cinnamon
  • 23 tbsp. heavy cream

Instructions

  1. Peel and dice the apple finely. Mix the flour, sugar, baking powder, cinnamon, ground ginger and salt in a large bowl. Add the cold butter and cut with a pastry blender or knife into small pieces. Mix the egg with the apple sauce and vanilla extract and add to the bowl and mix with your fingers until the dough starts to come together. Add the diced apples and knead together until the dough almost holds together. Place in the fridge for about 10-15 minutes.
  2. 2. Preheat the oven to 425°F (220°C). Line a baking wheet with paking parchment. Place the dough on a floured surface and form a flat disc with approx. Ø 8 inches (20cm). Cut like a pizza into 6 pieces and place those pieces on the baking sheet and sprinkle with the brown sugar. Bake for about 18-20 minutes until golden brown. Take out of the oven and let coo down on a wire rack.
  3. 3. For the glaze mix the confectioners’ sugar, cinnamon and heavy cream until smooth and then drizzle over the scones and let dry a bit.
