Quick and easy?! Yes, I can do that too. Sometimes. Not often though ;)
I am not baking 3 layered chocolate cakes all the time. I also appreciate easy recipes that can be done quickly. For example these Apple Pie Scones. The dough is prepared in no time, bit chillin’, bit baking ‘ and then a bit eatin’. Or maybe a lot of eating. I can hardly stop when I eat the first one of the batch to check if it’s baked properly ;))
Everything that gets close or is similar to an apple pie is basically awesome, don’t you think? The smell in the kitchen when your are baking something with apples and cinnamon… it is soooo good! I love it since I’m a kid – which is quite some time ago :P
These Apple Pie Scones make no difference. You place them in the oven and after couple of minutes they start to smell so good and I start drooling basically immediately ;)
If you ever made scones, you probably know they are pretty much foolproof. There is not much that can go wrong. Maybe if you bake them too long, then they turn out dry. If you stick with the baking times you should be fine. These scones would probably still be fine if you bake them a bit longer because there are a lot of apples inside that keep the scones moist ;)
INGREDIENTS / ZUTATEN
For the scones:
1 1/2 cups (200g) all-purpose flour
1/4 cup (50g) sugar
1 tsp. baking powder
1/2 tsp. ground cinnamon
1/4 tsp. ground ginger
1/4 tsp. salt
1/4 cup (60g) cold butter
1 large egg
1/4 cup (70g) applesauce
1/2 tsp. vanilla extract
1 large apple, peeled and diced
2-3 tbsp. brown sugar
For the glaze:
1 cup (130g) confectioners’ sugar
1/4 tsp. ground cinnamon
2-3 tbsp. heavy cream
Für die Scones:
200g Mehl (Type 405)
50g Zucker
1 TL Backpulver
1/2 TL gemahlener Zimt
1/4 TL gemahlener Ingwer
1/4 TL Salz
60g kalte Butter
1 Ei (L)
70g Apfelmus
1/2 TL Vanille Extrakt
1 großer Apfel, geschält und fein gewürfelt
2-3 EL brauner Zucker
Für die Glasur:
130g Puderzucker
1/4 TL Zimt
2-3 EL Sahne
DIRECTIONS / ZUBEREITUNG
2. Preheat the oven to 425°F (220°C). Line a baking wheet with paking parchment. Place the dough on a floured surface and form a flat disc with approx. Ø 8 inches (20cm). Cut like a pizza into 6 pieces and place those pieces on the baking sheet and sprinkle with the brown sugar. Bake for about 18-20 minutes until golden brown. Take out of the oven and let coo down on a wire rack.
3. For the glaze mix the confectioners’ sugar, cinnamon and heavy cream until smooth and then drizzle over the scones and let dry a bit.
2. Den Ofen auf 220°C (425°F) vorheizen. Ein Backblech mit Backpapier auslegen. Den Teig auf eine bemehlte Fläche legen und dann zu einer runden Scheibe Formen mit einem Durchmesser von etwa 20cm (8 inches), mit einem Messer dann wie eine Pizza in 6 gleichgroße Stücke schneiden, auf das Blech legen und dann mit dem braunen Zucker bestreuen. Für 18-20 Minuten backen, bis die eine schöne goldene Farbe bekommen haben. Herausnehmen und auf einem Kuchengitter abkühlen lassen.
3. Für die Glasur den Puderzucker mit dem Zimt und der Sahne glattrühren und damit dann die Scones verzieren.

Instructions
- Peel and dice the apple finely. Mix the flour, sugar, baking powder, cinnamon, ground ginger and salt in a large bowl. Add the cold butter and cut with a pastry blender or knife into small pieces. Mix the egg with the apple sauce and vanilla extract and add to the bowl and mix with your fingers until the dough starts to come together. Add the diced apples and knead together until the dough almost holds together. Place in the fridge for about 10-15 minutes.
