Easy Sugar Cookies (Amish Cookies)

Today’s Cookie Friday cookie recipe is an easy one. You don’t need any electrical appliances or machines. Just a whisk and a strong arm – that’s all ;) Easy peasy sugar cookies aka. Amish Cookies – the perfect little sweet companion with a cup of tea or coffee ;)

As I already mentioned – the cookies are also called Amish Cookies. Easy cookies that can be made in an instant. Since the Amish are hardly using any machines in their kitchens, these cookies can be made by just mixing everything together by hand. No chilling needed – from the bowl directly into the oven and then directly into your mouth. Maybe with a short waiting time so you won’t burn your tongue :P

These simple cookies are everyday cookies that go well with a cup of tea or coffee. I also used them already to make the base of a cheesecake (instead of biscuit cookies) or as cookie component in trifles and layer desserts. Also a good way to use them: Cake pops or should they be called cookie pops if they are made with cookies?! ;) Very versatile cookie :P

INGREDIENTS / ZUTATEN

(about 36 cookies)

1/2 cup (120g) butter, at room temperature
1/2 cup (120ml) vegetable oil
1/2 cup (100g) sugar
1/2 cup (60g) confectioners’ sugar
1 medium egg
1 tsp. vanilla extract
2 1/4 cups (290g) all-purpose flour
1/2 tsp. baking powder
pinch of salt

(ca. 36 Cookies)

120g weiche Butter
120ml Pflanzenöl
100g Zucker
60g Puderzucker
1 Ei (M)
1 TL Vanille Extrakt
290g Mehl (Type 405)
1/2 TL Backpulver
Prise Salz

DIRECTIONS / ZUBEREITUNG

1. Preheat the oven to 375°F (190°C). Line a baking sheet with baking parchment and set aside.

2. Add the butter, oil, sugar, and confectioners’ sugar to a large bowl and mix until well combined. Add the egg and vanilla extract and mix until light and creamy. Mix the flour with baking powder, and salt. Add to bowl and mix until just combined. Use a small cookie scoop or teaspoons and place dough with enough space in between on the baking sheet and bake for 8-10 minutes until the sides of the cookies start to get some color – the tops of the cookies should still be light. If you bake them too long, they get dry. Take out of the oven, let cool down for some time on the baking sheet, then transfer to a wire rack and let cool down completely. Repeat with the remaining dough.

1. Den Ofen auf 190°C (375°F) vorheizen. Ein Backblech mit Backpapier auslegen und zur Seite stellen.

2. Die Butter mit dem Öl, Zucker und Puderzucker in einer große Schüssel aufschlagen, bis sich alles gut verbunden hat. Das Ei und den Vanille Extrakt dazugeben und hell und so lange aufschlagen, bis alles hell und cremig ist. Das Mehl mit Backpulver und Salz vermischen und dann zur Schüssel dazugeben und nur kurz unterrühren. Mit einem kleinen Cookie Scoop (Eisportionierer) oder Teelöffeln kleine Teigportionen mit genügend Abstand auf das Blech setzen (bei mir haben 12 auf ein Blech gepasst) und für 8-10 Minuten backen – die Ränder der Cookies sollten ein wenig Farbe bekommen haben, oben sollten sie aber noch hell sein, sonst sind sie zu trocken. Aus dem Ofen nehmen, kurz auf dem Blech abkühlen lassen, dann auf einem Kuchengitter komplett auskühlen lassen. Mit dem restlichen Teig wiederholen.
