Description

Easy peasy simple sugar cookies that go well with your coffee and tea – also good if you need a base for a cake :)


Ingredients

Scale
  • 1/2 cup (120g) butter, at room temperature
  • 1/2 cup (120ml) vegetable oil
  • 1/2 cup (100g) sugar
  • 1/2 cup (60g) confectioners’ sugar
  • 1 medium egg
  • 1 tsp. vanilla extract
  • 2 1/4 cups (290g) all-purpose flour
  • 1/2 tsp. baking powder
  • pinch of salt

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with baking parchment and set aside.
  2. Add the butter, oil, sugar, and confectioners’ sugar to a large bowl and mix until well combined. Add the egg and vanilla extract and mix until light and creamy. Mix the flour with baking powder, and salt. Add to bowl and mix until just combined. Use a small cookie scoop or teaspoons and place dough with enough space in between on the baking sheet and bake for 8-10 minutes until the sides of the cookies start to get some color – the tops of the cookies should still be light. If you bake them too long, they get dry. Take out of the oven, let cool down for some time on the baking sheet, then transfer to a wire rack and let cool down completely. Repeat with the remaining dough.
