If I take a look at the previous weeks, there were many situations where I would have loved to get into that bowl with these Chia Kiwi Popsicles. Just for a couple of minutes to cool down a bit. The heat in Berlin is not nice anymore. Let’s hope this week is going to be slightly cooler… or better »let’s wish for it«!

Ice is a major topic in our house this summer. Not only because it is cooling us down in this extraordinary heat we are experiencing this summer in Berlin – also because we welcomed a little new gadget in our kitchen… an ice cream maker! Yay! Very important machine this year. These popsicles here are not made with an ice cream maker… of course not. The popsicles are made the old-fashioned way in the freezer.
Besides making ice with a machine and with popsicle molds you can also make ice cream by adding the ice cream mixture to a plastic box, placing it in the fridge and mixing it several times so you get creamy delicious ice cream. That would be the most labor-intensive way to make ice. Making popsicles is much easier – make a cream, add it to the molds, stick in a wooden stick and off to the freezer. That’s it.

These popsicles are somewhat of an experiment for me. It’s the first time I use chia pudding for an ice cream – worked really well I think. You all know chia, right? That superfood thingy. Little seeds you mix with water, juice or (plant-based) milk for example and after several minutes you get a quite (nasty-looking) wobbly mixture – chia pudding. Even though I do not really like the look of it, if you prepare it with milk and vanilla for example you get a really tasty pudding.
You can make the popsicles just with the pudding – but I recommend to add some fruits. You can use kiwi as well as pineapple, banana or other fruits or berries you like as an addition to the chia pudding.
INGREDIENTS / ZUTATEN
(for 8 popsicles)
2 cups (500ml) soy milk*
1/4 cup (40g) chia seeds*
2 tbsp. honey (from local sources)
1/2 tsp. vanilla extract*
1-2 green or yellow kiwi
a popsicle mold*
8 wooden sticks*
(für 8 Popsicles)
500ml Sojamilch*
40g Chiasamen*
2 EL Honig (von lokalen Produzenten)
1/2 TL Vanille Extrakt*
1-2 grüne oder goldene Kiwi
eine Popsicle Eisform*
8 Eisstiele*


DIRECTIONS / ZUBEREITUNG
1. Add the soy milk to a bowl and mix with the chia seeds. Let soak for about 20-30 minutes – stir from time to time so the seeds do not stick together too much. Mix in the honey and vanilla extract and set aside.
2. Peel the kiwi(s) and cut into thin slices. Add the slices to the molds and press onto the sides, fill with the chia pudding filling. You can use a spoon or chopsticks to keep the kiwi slices in place while filling in the pudding with a spoon. Cover the mold with the lid and place the wooden sticks in the centers of the popsicle molds. Freeze for at least 6 hours or overnight.
1. Die Sojamilch in ein Gefäß geben und mit den Chiasamen verrühren und für etwa 20-30 Minuten quellen lassen – zwischendurch mal umrühren, damit die Samen nicht zusammenklumpen. Dann den Honig und Vanille Extrakt dazugeben und alles verrühren. Zur Seite stellen.
2. Die Kiwi(s) schälen und in dünne Scheiben schneiden. Die Scheiben an die Innenseiten der Popsicle-Formen drücken und dann die Chia-Pudding-Mischung vorsichtig einfüllen. Man kann die Kiwischeiben mit einem Löffel oder mit Essstäbchen an Ort und Stelle halten. Deckel auf die Formen setzen und die Eisstiele positionieren und dann für mindestens 6 Stunden oder über Nacht einfrieren.
