There are cupcakes, and then there are »cupcakes«! Delicious little treats like these Pretzel Cupcakes with Obazda Topping. They aren’t exactly what you’d typically expect from this type of sweet dessert. Our version is perfect for anyone who prefers something savory or might be in need of a tasty snack for their next Oktoberfest party…

Most people know cupcakes as a sweet dessert, right?! For a while, they were really popular. Especially in the US, which is actually where I first discovered them many moons ago. These days, however, they’ve fallen a bit out of the spotlight. You can still find them in many coffee shops, but the cupcake craze is over. Cookies and other baked goods have taken the lead…

But that doesn’t matter to us, because these »cupcakes« aren’t really cupcakes at all. Strictly speaking, they’re just simple pretzel rolls topped with a hearty cheese spread. Calling them »Pretzel Cupcakes« instead of »pretzel rolls with cheese on top« just sounds better, doesn’t it?

Here in Berlin, it can be tricky to find really good pretzels and other types of »Laugen (lye) pastries«. Compared to what you get in ordinary bakeries in Southern Germany (Baden-Württemberg and Bavaria), Berlin pretzels and the like often have a lot of room for improvement. They frequently have a strange texture, aren’t crispy enough, lack sufficient salt, and so on… And if the person making the pretzels at the shop is having a bad day, the whole thing can turn into a total disaster.

So, what’s the solution? Bake stuff like that at home! Admittedly, pretzels are a bit trickier to make if you want that classic shape. You have to master the art of twisting and knotting the dough – otherwise, they can easily end up looking a bit wonky. Laugenbrötchen aka. pretzel rolls, on the other hand, are easier to make. You simply shape the dough into nice balls and score the tops so they can rise properly – that’s it. Well… plus the lye bath. But that’s also easy.

These pretzel cupcakes are perfect for buffets, relaxed evenings on the patio, or picnics in the park. If you’re serving them at home, you can serve them fully assembled. If you want to take them as a snack outdoors, pack the pretzel rolls and the Obazda (plus toppings) separately and assemble the cupcakes on-site. Or even better, let your guests/family/friends do it themselves. Show them how to make one, and then everyone can give it a try themselves.

For these delicious pretzel cupcakes, we love making a classic Obazda – though the recipe includes options for customizing the cheese spread if the classic version doesn’t quite cut it. Walnuts, bell peppers, cranberries… Obazda can easily be altered if you’re in the mood.

INGREDIENTS / ZUTATEN

(10 rolls/cupcakes)

For the pretzel rolls:
5 fl. oz. (150ml) lukewarm milk
1/2 tsp. sugar (fine)*
1/2 cube (0.7 oz./21g) fresh baker’s yeast
9 oz. (250g) all-purpose flour*
1/2 tsp. salt
0.7 oz. (20g) butter, at room temperature
about 67 fl. oz. (2 l) of water
5 tbsp. baking soda*
coarse salt (pretzel salt*)

For the Obazda:
7 oz. (200g) Camembert (soft)
3.5 oz. (100g) cream cheese
0.7 oz. (20g) butter, at room temperature
1/2 red onion, finely diced
1/2 tsp. paprika powder (sweet)*
a few caraway seeds* (crushed)
salt, pepper

For the decoration:
a few salted pretzels*
a few (red) radish slices
some chives, chopped

Optional:
1/4 red or yellow bell pepper, finely diced
1-2 tbsp. walnuts*, chopped
1 tbsp. dried cranberries*, chopped

(10 Brötchen/Cupcakes)

150ml Milch, lauwarm
1/2 TL Zucker (fein)*
1/2 Würfel (21g) frische Hefe
250g Mehl (Type 405)*
1/2 TL Salz
20g weiche Butter
etwa 2l Wasser
5 EL Natron*
grobes Salz (Brezelsalz*)

Für den Obazda:
200g Camembert (weich)
100g Frischkäse
20g weiche Butter
1/2 rote Zwiebel, fein gewürfelt
1/2 TL Paprikapulver (edelsüß)*
etwas Kümmel* (zerstoßen)
Salz, Pfeffer

Für die Dekoration:
einige Salzbrezeln*
einige Radieschenscheiben
etwas Schnittlauch, in Röllchen

Optional:
1/4 rote oder gelbe Paprika, fein gewürfelt
1-2 EL Walnusskerne*, gehackt
1 EL getrocknete Cranberries*, gehackt

DIRECTIONS / ZUBEREITUNG

1. Add milk and sugar to the bowl of a stand mixer and mix to combine. Crumble the yeast, add it to the bowl and mix everything until the yeast has dissolved completely. Let sit and bubble in a warm place for about 15 minutes.

2. Add the flour, salt, and butter to the bowl and knead everything for about 10 minutes until a smooth dough forms – it should be very elastic and pull away from the sides of the bowl. Cover the bowl with a kitchen towel and let the dough rise in a warm place for about 30–40 minutes. The dough should roughly double in volume.

3. Knead the dough briefly on a lightly floured surface with your hands, then divide it into 10 portions and shape each into a smooth ball. Place the dough balls with some space in between on a board or baking sheet lined with baking parchment or a baking mat and place them in the fridge for about 1 hour.

4. Preheat the oven to 210°C (410°F). Grease a 12-cup muffin tin* and set it aside.

5. Bring a pot with about 2 liters of water to a boil. Slowly sprinkle in the baking soda (Caution: it will foam up vigorously!) and stir until completely dissolved. Place the dough balls in the simmering baking soda water (only 1–2 at a time) and let them swim for about 30 seconds. Remove the dough balls from the water with a slotted spoon*, let them drain briefly, and then place them – smooth side up – into the cups of the prepared muffin tin.

6. Once all the dough balls are in the cups, cut a cross into the top of each one using a sharp knife – don’t be timid here and make good, deep cuts. Sprinkle the dough balls with coarse salt and bake them for about 17–20 minutes. The pretzel rolls should be well-risen and nicely browned. Remove the rolls from the oven, let them cool slightly, then carefully release them from the muffin tin (e.g., using a knife) and transfer them to a wire rack to cool completely.

7. To make the Obazda, cut the Camembert into small cubes, then mash and mix it in a bowl with the cream cheese and butter – the mixture should look uniform but can still contain small chunks. Add the finely diced onion, paprika powder, some crushed caraway seeds, and a little salt and pepper, then mix everything well. Adjust the seasoning with more salt and pepper if necessary.

8. Garnish the cooled pretzel rolls as desired with some Obazda, salted pretzels, radish slices, and chives to make them look like cupcakes.

Notes:
You can spice up or vary the Obazda if you like. Simply divide the cheese mixture into several batches and fold in ingredients such as diced bell pepper, chopped walnuts, or dried cranberries. You can then decorate the pretzel cupcakes differently depending on the added ingredients.

1. Milch und Zucker in der Schüssel einer Küchenmaschine verrühren, die Hefe zerbröckeln, dazugeben und dann alles so lange verrühren, bis sich die Hefe komplett aufgelöst hat. An einem warmen Ort für etwa 15 Minuten gehen lassen.

2. Mehl, Salz und Butter zur Schüssel dazugeben und dann alles für etwa 10 Minuten zu einem glatten Teig verkneten – der Teig sollte sehr elastisch sein und sich vom Rand der Schüssel lösen. Die Schüssel mit einem Küchentuch abdecken und dann für etwa 30-40 Minuten an einem warmen Ort gehen lassen. Das Volumen des Teiges sollte sich in etwa verdoppeln.

3. Den Teig auf einer leicht bemehlten Arbeitsfläche noch einmal durchkneten und dann in 10 Portionen aufteilen und jeweils zu einer glatten Kugel formen. Die Teigkugeln mit etwas Abstand zueinander auf ein Brett/Blech mit Backpapier oder Backfolie setzen und für etwa 1 Stunde in den Kühlschrank stellen.

4. Den Ofen auf 210°C (410°F) Ober-/Unterhitze vorheizen. Ein 12er Muffinblech* einfetten und zur Seite stellen.

5. Einen Topf mit etwa 2l Wasser aufsetzen und das Wasser zum Kochen bringen. Das Natron einrieseln lassen (Achtung, schäumt stark auf!) und so lange rühren, bis es sich komplett aufgelöst hat. Die Teigkugeln nacheinander (jeweils nur 1-2 Kugeln auf einmal) für etwa 30 Sekunden ins köchelnde Natronwasser geben. Die Teigkugeln mit einem Schaumlöffel* aus dem Wasser herausheben, kurz abtropfen lassen und dann mit der glatten Seite nach oben in die Mulden des vorbereiteten Muffinblechs setzen.

6. Wenn alle Teigkugeln in den Mulden sitzen, jede Teigkugel mit einem scharfen Messer kreuzweise einschneiden – hier sollte man nicht zaghaft sein und gute, tiefe Schnitte machen. Die Teigkugeln mit grobem Salz bestreuen und dann für etwa 17-20 Minuten backen – die Laugenbrötchen sollten schön aufgegangen sein und eine gute Bräunung haben. Die Laugenbrötchen aus dem Ofen nehmen, etwas abkühlen lassen und dann vorsichtig aus der Muffinform lösen (z.B. mit einem Messer) und dann auf einem Kuchengitter komplett auskühlen lassen.

7. Für den Obazda den Camembert in kleine Würfel schneiden und dann zusammen mit Frischkäse und weicher Butter in einer Schüssel zerdrücken und verrühren – die Masse soll homogen aussehen, darf aber auch kleine Stücke haben. Die fein gewürfelte Zwiebel, Paprikapulver, einige zerstoßene Kümmelsamen, etwas Salz und Pfeffer dazugeben und alles gut vermischen. Falls notwendig, noch mit etwas mehr Salz und Pfeffer abschmecken.

8. Die abgekühlten Laugenbrötchen nach Belieben mit etwas Obazda, Salzbrezeln, Radieschenscheiben und Schnittlauch dekorieren, damit sie wie Cupcakes aussehen.

Hinweise:
Man kann den Obazda noch aufpeppen/abwandeln, wenn man möchte – dazu einfach die Käsemasse aufteilen und dann jeweils z.B. gewürfelte Paprika, gehackte Walnüsse oder getrocknete Cranberries untermengen. Entsprechend den zusätzlichen Zutaten kann man die Brezn Cupcakes dann auch unterschiedlich dekorieren.

Cupcakes don’t always have to be sweet – these Pretzel Cupcakes with Obazda Topping are perfect for German-themed parties like the Oktoberfest.


Ingredients
