In summer, it’s often too warm in our kitchen to stand at the stove for a long time cooking up a warming stew. Dishes like that are really better suited for the cold, wet days of autumn and winter. This delicious Stew with White Beans, Chickpeas & Swiss Chard is also intended for the cooler months rather than the height of summer. Though… cook it whenever you are in the mood, right?!

Of course, you can make this stew at other times of the year, too. That’s especially relevant considering that chard is typically in season here during summer and late summer. It’s harder to find from local growers in autumn and winter – at least where I live. So, perhaps it is a summer stew after all?! I mean, if you have one of those cooler, rainy summer days – why not making it?! Hmm… probably not a winning concept, given the extreme summer temperatures we’ve seen in Germany lately due to climate change.
Anyway. Whenever chard is available (and you can always freeze it if you want to), this stew is perfect. Let’s just leave it at that and not overthink it…

In theory, you could make this dish with other veggies as well. Let’s be honest, whether you have Swiss chard or not isn’t exactly a dealbreaker. Spinach is a great alternative, for example. It’s always a great option for stews and other dishes whenever you want a touch of green. To be honest, I’d even try bok choy in a pinch if there were no other greens around. It works beautifully in soups, so why not in a tasty stew?
We really love this stew because it’s easy to prepare. You just need to chop up all the ingredients, sauté them briefly one after another, add seasoning, toss in pre-cooked beans and chickpeas, pour in the broth, and you’re done. If you don’t spend too much time chopping the veggies, the stew should be ready to serve in about 45 minutes. That’s almost record time for a veggie stew – they often take a bit longer to get ready.
We like to use a little bacon in stews like this one here. It adds extra flavor, though it isn’t strictly necessary. If you want to create a vegetarian or even vegan version here, you can easily do so by simply omitting the bacon. Just season it a bit more boldly with the spices instead, and you’ll have an equally delicious vegetarian or vegan stew ready to go.

INGREDIENTS / ZUTATEN

some olive oil for frying
3.5 oz. (100g) bacon, finely diced (optional)
2 small red onions, finely diced
2-3 garlic cloves, finely chopped
2 celery stalks, finely diced
1 large carrot, finely diced
1 red bell pepper, cut into small pieces
1 tsp. dried oregano*
1 tsp. dried thyme*
1 tsp. cayenne pepper*
1/4 tsp. ground cumin*
1 tbsp. white miso paste*
2 cans (14 oz./400g) white giant beans*
1 can (14 oz./400g) chickpeas*
1 small Swiss chard, chopped & divided
4 cups (1l) veggie broth
salt, pepper
(4-5 Portionen)
etwas Olivenöl zum Anbraten
100g Speck, fein gewürfelt (optional)
2 kleine rote Zwiebeln, fein gewürfelt
2-3 Knoblauchzehen, fein gehackt
2 Stangensellerie, fein gewürfelt
1 große Karotte, fein gewürfelt
1 rote Paprika, in kleinen Stücken
1 TL Oregano*
1 TL Thymian*
1 TL Cayennepfeffer*
1/4 TL Kreuzkümmel*
1 EL weiße Misopaste*
2 Dosen (400g) weiße Riesenbohnen*
1 Dose (400g) Kichererbsen*
1 kleiner Mangold, in Stücken & aufgeteilt
1L Gemüsebrühe
Salz, Pfeffer

DIRECTIONS / ZUBEREITUNG
1. Start by preparing the ingredients so you have everything ready when needed. If using bacon, dice it finely. Peel and finely dice or chop the onions and garlic. Clean and finely dice the celery stalks and carrot. Wash and dry the bell pepper, remove the seeds and membranes, and cut it into bite-sized pieces. Wash and dry the Swiss chard – cut the thick (white) stalks into small pieces and the green leaves into slightly larger, bite-sized pieces. Keep both separate. Drain the beans and chickpeas. Keep everything ready.
2. Heat up a large cast-iron pot* with a little olive oil. If using bacon, render it briefly in the hot oil. Add the onions and garlic and sauté them for a few minutes until soft and glossy. Next, add the diced celery and carrot and sauté as well for a few minutes. Once the celery and carrot have softened slightly, add the bell pepper and sauté briefly with the rest. Next, add the dried oregano, thyme, cayenne pepper, cumin, and miso paste and stir in. Add the drained beans, chickpeas, and the white pieces of the Swiss chard to the pot, mix everything, and sauté briefly. Deglaze everything with the veggie broth. Bring to a boil, then reduce the heat slightly and let the stew simmer for about 10 minutes.
3. After ten minutes, add the remaining Swiss chard to the pot and let everything simmer for another 10-12 minutes. Season with salt and pepper to your liking.
1. Mit dem Vorbereiten der Zutaten starten. Wer Speck verwenden möchte, sollte ihn fein würfeln. Die Zwiebeln und den Knoblauch schälen und fein würfeln bzw. hacken. Den Stangensellerie und die Karotte säubern und dann fein würfeln. Die Paprika waschen, von den Innereien befreien und dann in mundgerechte Stücke schneiden. Den Mangold waschen und trocknen – die dicken (weißen) Stiele in kleine Stücke schneiden, die grünen Blätter des Mangolds in etwas größere, mundgerechte Stücke schneiden. Beides getrennt voneinander bereitstellen. Die Bohnen und Kichererbsen abgießen und abtropfen lassen.
2. Einen großen gusseisernen Topf* mit etwas Olivenöl erhitzen. Wer den Speck verwenden möchte, lässt diesen ein wenig im heißen Öl aus. Dann die Zwiebeln und den Knoblauch dazugeben und einige Minuten glasig andünsten. Als Nächstes den gewürfelten Stangensellerie und die Karotte dazugeben und einige Minuten mit anschwitzen lassen. Wenn Sellerie und Karotte etwas weicher geworden sind, die Paprikastücke dazugeben und kurz mit anbraten. Als Nächstes den Oregano, Thymian, Cayennepfeffer, Kreuzkümmel und die Misopaste dazugeben und alles gut verrühren. Die abgetropften Bohnen, Kichererbsen und die dickeren (weißen) Stücke des Mangolds in den Topf dazugeben, alles vermengen und kurz anrösten lassen, dann mit der Gemüsebrühe ablöschen. Alles einmal aufkochen lassen, dann die Hitzezufuhr ein wenig reduzieren und den Eintopf etwa 10 Minuten köcheln lassen.
3. Nach den zehn Minuten den Rest des Mangolds in den Topf dazugeben und den Eintopf weitere 10-12 Minuten köcheln lassen. Nach Belieben mit Salz und Pfeffer abschmecken.
