Description
Delicious ice with chia pudding and kiwi slices – perfect for a hot summer day!
Ingredients

- 2 cups (500ml) soy milk
- 1/4 cup (40g) chia seeds
- 2 tbsp. honey
- 1/2 tsp. vanilla extract
- 1–2 green or yellow kiwi
- popsicle mold
- wooden sticks
Instructions
- Add the soy milk to a bowl and mix with the chia seeds. Let soak for about 20-30 minutes – stir from time to time so the seeds do not stick together too much. Mix in the honey and vanilla extract and set aside.
- Peel the kiwi(s) and cut into thin slices. Add the slices to the molds and press on to the sides, fill with the chia pudding filling. You can use a spoon or chopsticks to keep the kiwi slices in place while filling in the pudding with a spoon. Cover the mold with the lid and place the wooden sticks in the centers of the popsicle molds. Freeze for at least 6 hours or overnight.
