Description

Delicious ice popsicles with chia pudding and kiwi slices – perfect for a hot summer day! We love this easy-to-make popsicles in summer.


Ingredients

Scale

2 cups (500ml) soy milk*
1/4 cup (40g) chia seeds*
2 tbsp. honey (from local sources)
1/2 tsp. vanilla extract*
1-2 green or yellow kiwi

a popsicle mold*
8 wooden sticks*


Instructions

1. Add the soy milk to a bowl and mix with the chia seeds. Let soak for about 20-30 minutes – stir from time to time so the seeds do not stick together too much. Mix in the honey and vanilla extract and set aside.

2. Peel the kiwi(s) and cut into thin slices. Add the slices to the molds and press onto the sides, fill with the chia pudding filling. You can use a spoon or chopsticks to keep the kiwi slices in place while filling in the pudding with a spoon. Cover the mold with the lid and place the wooden sticks in the centers of the popsicle molds. Freeze for at least 6 hours or overnight.
