Fancy some delicious sandwiches? We here in Germany are world champions when it comes to baking bread, but are we also the best when it comes to sandwiches? Not really. Other countries tend to be more creative when making sandwiches. Denmark and the US are our clear favorites here. Mom certainly wouldn’t have packed us these delicious (Veggie) Smoked Tofu Avocado Sandwiches for school back in the days. Let’s assume she did not even know what smoked tofu was back in the 80s and 90s. ;P

You can really do a lot with good bread. Even though we Almans have a long tradition when it comes to bread and bread rolls, I have the feeling that we haven’t really done much with them. We have something called »Abendbrot« – a typical simple dinner in German families where you eat sliced bread with cheeses, cold cuts, spreads, and dips, for example. Something that can be prepared quickly.
Although – these days it seems people try different stuff as well. We try new stuff all the time. ;P I blame all those creative full-time moms with blogs that show us what’s possible. They come up with crazy good ideas, new ingredients and flavors for sandwiches… we are definitely more »old-school and boring« here. Let’s be honest. ;P Nonetheless. We got some nice sandwich recipes here on the blog – including this one here. Being less creative is not stopping us from serving something delicious.

If you never tried anything with smoked tofu before, you should certainly take a closer look at these simple sandwiches here. Smoked Tofu is great! The combination with the avocado and spicy Sriracha sauce is simply delicious. We love this type of tofu because, unlike regular tofu, it has a lot more flavor from the get-go. Plain old tofu has to be seasoned a lot before you can actually enjoy it. ;P
When you’re out and about, these sandwiches are quite practical. Like almost all sandwiches. If you wrap them in sandwich paper (without cutting them in half immediately), the sandwiches will keep well in any bag you are traveling with. If you want to be on the safe side, you can also get a lunch box or bento box. Those boxes are normally big enough to hold additional snacks as well. That’s not bad at all, right? ;P
As already mentioned, we’re not the most creative when it comes to sandwiches, but we still have some delicious stuff to show. Our easy Club Sandwiches with Chicken & Bacon are extremely taste and also quite easy to prepare. If you are not limited to a vegetarian or vegan diet, those sandwiches can definitely be an option for you.

We know – they are a lot and undoubtedly not the best sandwich to travel with. The journey from the plate to the mouth can be challenging already for some people out there. Not us, though. We know how to eat a meatball sub accident-free. ;P
INGREDIENTS / ZUTATEN
(2 sandwiches)
For the sauce:
1-2 sun-dried tomato(es), minced
1/4 cup (60g) sour cream
some smoked paprika powder*
salt, pepper
For the sandwiches:
some oil for frying
3.5 oz. (100g) smoked tofu*, sliced
4 large slices of bread
some salad leaves
2 tomatoes, sliced
1/2 avocado, sliced
some Sriracha sauce* (or any other hot chili sauce)
(2 Sandwiches)
Für die Soße:
1-2 getrocknete Tomate(n), fein gehackt
60g Schmand
etwas Smoked Paprika Pulver*
Salz, Pfeffer
Für die Sandwiches:
etwas Öl zum Anbraten
100g Räuchertofu*, in Scheiben
4 große Scheiben Brot
2 Handvoll Pflücksalat
2 Tomaten, in Scheiben
1/2 Avocado, in Scheiben
etwas Sriracha Sauce* (oder eine andere scharfe Chili-Soße)

DIRECTIONS / ZUBEREITUNG
1. Mince the sun-dried tomato(es) for the sauce finely. Combine with the sour cream in a small bowl and season with paprika powder, salt, and pepper to your liking. Set aside.
2. Heat up a frying pan with some oil. Cut the smoked tofu into (not too thick) slices and fry until nicely browned on all sides. Remove from the frying pan and let it drain on some kitchen paper to get rid of some of the oil.
3. Spread the sauce on all four slices of bread, add some lettuce on top of two of the slices of bread and top the salad with tomato and tofu. Drizzle everything with Sriracha sauce to your liking, then place the avocado slices on top (if you like, you can add some extra lettuce as well) and close the sandwiches with the two slices of bread that only have the sauce on them. Wrap the sandwiches in greaseproof paper, secure with string if necessary, and cut each one in half. Enjoy!
1. Die getrocknete(n) Tomate(n) für die Soße sehr fein hacken und dann mit dem Schmand in einer kleinen Schale vermischen. Mit Paprikapulver, Salz und Pfeffer würzen und dann zur Seite stellen.
2. Etwas Öl in einer Pfanne erhitzen. Den Räuchertofu in (nicht zu dicke) Scheiben schneiden und dann von allen Seiten scharf anbraten, bis er ordentlich Farbe bekommen hat. Aus der Pfanne nehmen und auf etwas Küchenpapier abtropfen lassen, damit das Öl ein wenig abtropfen kann.
3. Die Soße auf allen vier Brotscheiben verstreichen, etwas Salat auf zwei der Scheiben verteilen und dann mit Tomatenscheiben und Tofu belegen. Nach Belieben mit Sriracha Sauce beträufeln, dann die Avocadoscheiben auflegen (wer mag, kann hier noch etwas zusätzlichen Salat nachlegen) und die Sandwiches mit den zwei verbliebenen Brotschreiben (ohne Toppings) deckeln. Die Brote in Butterbrotpapier einwickeln, ggf. mit Schnüren absichern und dann jeweils in der Mitte auseinanderschneiden. Lasst es euch schmecken!
