Smoked Tofu Avocado Sandwiches

Ingredients

For the sauce

  • 1/4 cup (60g) sour cream
  • 1 dried tomato, minced
  • smoked paprika
  • salt, pepper

For the sandwiches

  • 3.5 oz. (100g) smoked tofu
  • oil for frying
  • 4 large slices of bread
  • salad leaves
  • 2 tomatoes, sliced
  • 1/2 avocado, sliced
  • sriracha sauce (or any other hot chili sauce)

Instructions

  1. For the sauce mix the sour cream with the minced dried tomato. Season with smoked paprika, salt and pepper. Set aside. Cut the smoked tofu into slices.
  2. Heat up a pan, add the oil and fry the tofu until it gets a nice color. Let drain on a paper towel. Spread the sauce evenly on the bread, add some salad leaves on two of the slices, top with tomato slices and the tofu pieces. Drizzle with some Sriracha sauce (you decide how spicy you like your sandwiches), place avocado slices on top and finish with the remaining bread. Press together, wrap in paper and cut in half.
