Maple Walnut Apple Crumble

    When Apples are in season and delivered fresh to the supermarket or farmers market, you should make something with them. I personally love everything made with apples. Apple cake, pie, cookies… My recipe today is an easy one with apples you can enjoy all year round – Apple Crumble with Maple Walnuts.

    Even though an apple cake is nice in summer, for me it’s the perfect bake for fall and early winter. Apples in combination with cinnamon always remember me of fall and the time to get cozy on the sofa ;) I am normally a summer person, but who could resist a nice evening with a movie and some apple crumble on the sofa? Nobody!

    Apple crumble is basically an apple cake deconstructed and really easy to prepare. All you have to do is dice the apples, make some streusel and mix everything in small baking forms and bake it. Everybody can do that. You can easily prepare the apple crumble some time in advance and bake them when needed. Served with some vanilla sauce or ice cream hardly anyone can resist ;)

    For the extra crunch, I made the toasted pecans with maple syrup. That’s something I have at home almost all the time. You can use that on many desserts for some extra flavor or just for decorations… or also good – mixed with your muesli in the morning ;)

    INGREDIENTS / ZUTATEN

    (for 4 servings)

    1/2 cup (50g) walnuts
    1 tbsp. maple syrup
    1 tsp. brown sugar
    1/2 cup (70g) all-purpose flour
    1/4 cup (50g) brown sugar
    2/3 cup (60g) rolled oats
    1/4 tsp. ground cinnamon
    1/3 cup (75g) butter, at room temperature
    3-4 medium apples

    (für 4 Portionen)

    50g Walnüssse
    1 EL Ahornsirup
    1 TL brauner Zucker
    70g Mehl (Type 550)
    50g brauner Zucker
    60g Haferflocken (Kleinblatt)
    1/4 TL Zimt
    75g weiche Butter
    3-4 mittelgroße Äpfel

    DIRECTIONS / ZUBEREITUNG

    1. Preheat the oven to 390°F (200°C). Line a baking sheet with baking parchment and set aside. Mix the walnuts with the maple syrup and the tablespoon sugar until well combined. Spread on top of the baking sheet and bake for about 5-6 minutes until golden brown and crisp. Take out of the oven and let cool down a bit, then chop coarsely or break apart.

    2. While the walnuts are roasting, mix the flour with brown sugar, oats, and cinnamon in a bowl until well combined. Add the butter in small pieces and mix everything with your fingers until streusel form. Set aside.

    3. Peel the apples, quarter and core. Cut into small dice and divide between four small baking forms (Ø 4-5 inches). Top with the streusel and chopped walnuts and bake for 18-20 minutes until the streusel have a nice golden color. Take out of the oven and let cool down a bit. Serve warm with some vanilla ice cream or vanilla sauce.

    1. Den Ofen auf 200°C (390°F) vorheizen. Ein Backblech mit Backpapier auslegen und zur Seite stellen. Die Walnüsse mit dem Ahornsirup und dem Eßlöffel Zucker vermischen, auf dem Backblech verteilen und dann für 5-7 Minuten im Ofen anrösten. Herausnehmen und abkühlen lassen, dann grob hacken oder zerbrechen.

    2. Während die Walnüsse rösten das Mehl mit dem braunen Zucker, Haferflocken und Zimt in einer Schüssel vermischen. Die Butter in kleinen Stücken dazugeben und mit den Fingern alles zu Streuseln verarbeiten. Zur Seite stellen.

    3. Die Äpfel schälen, vierteln, entkernen und dann in Würfel schneiden. Die Äpfel auf 4 Förmchen (Ø 10-12cm) verteilen. Die Streusel und Walnüsse über die Äpfel streuen, bis alles bedeckt ist und dann für 18-20 Minuten backen, bis die Streusel goldbraun geworden sind. Aus dem Ofen nehmen und ein wenig abkühlen lassen. Noch warm mit Vanilleeis oder Vanillesoße servieren.
