Homemade Vanilla Extract

    You want to save some money? Well – can’t give you advice on the stock market, but definitely some tipps for the kitchen ;)

    German baking recipes hardly use pure vanilla extract – we normally use “vanilla sugar” for flavoring. For that reason, pure vanilla extract is not that common in German supermarkets. Well… since this blog is also about finding alternatives for “tricky” ingredients, I decided to make the vanilla extract at home – and who would have guessed – it is pretty easy to do and I think better than the stuff you can buy in stores.

    INGREDIENTS / ZUTATEN

    Whole vanilla beans (Madagascar, Tahitian or Mexican for example)
    Liquor (vodka, white or golden rum)
    200ml amber colored bottles 

    Vanilleschoten (Madagascar-, Tahiti- oder Mexikanische Vanille)
    Alkohol (Wodka, Weißer oder Brauner Rum)
    200ml Glasflaschen, braun

    DIRECTIONS / ZUBEREITUNG

    1. Split the vanilla beans lengthwise and cut them in half. For 200ml of alcohol I used 2 whole vanilla beans (only one from the tahitian, because they are much bigger). Insert the vanilla beans in the bottle and fill with liquor. I paired the Madagascar with Vodka and the Mexican with golden rum.

    2. Seal the bottles and label them. Keep in a dark, cool place and shake at least once a week. Do so for at least 2 months and you will have homemade vanilla extract!

    3. If the vanilla extract is gone and you want to make new one, don’t throw the old vanilla beans away – leave them in the bottle and add new ones and fill again with liquor – the taste only gets better…

    1. Vanilleschoten längs aufschneiden und halbieren. Für je 200ml sollten zwei Vanilleschoten reichen (von der Tahitivanille sollte eine reichen, weil diese größer sind). Vanilleschoten in die Flaschen geben und mit Alkohol auffüllen. Die Madagascar Vanille zB. mit dem Wodka und die Mexikanische Vanille mit dem braunen Rum.

    2. Flaschen verschliessen und mit einem Schild (Vanilleart/Datum) versehen. An einem dunklen und kühlen Ort aufbewahren und mindestens einmal die Woche schütteln. Dies für mindestens zwei Monate wiederholen und der selbstgemachte Vanille Extrakt ist fertig! 

    3. Wenn der Vanille Extrakt aufgebraucht ist und neuer angesetzt werden soll, dann die alten Schoten nicht wegwerfen – einfach neue dazugeben und wieder mit Alkohol auffüllen. Der Geschmack wird nur noch intensiver…
