Double Chocolate Maltesers Cookies

    It’s Cookie Friday once again! This means I got a fresh batch of cookies for you – super chocolaty cookies with a little surprise inside: Maltesers candy balls. I suppose you know these little sweet chocolate candy balls. They give these Double Chocolate Malteser Cookies a great crunch and of course – great flavors… ;)

    You can use just about anything in cookies – in the last few years I’ve tried out quite a few things, I’d say. Chocolate and nuts are rather standard here, with dried fruits it can already get more interesting because there are some dried fruits that are really nice in bakes. If you use ingredients that are not quite so common, it becomes really interesting. Cookies with popcorn, cookies with salted pretzels, cookies stuffed with loads of chocolate bars or cookies like these here with Maltesers are something special and really delicious.

    I assume most of you know about Maltesers. If you google it here in Germany you probably find a Catholic charity organization first in the search results, but we are definitely talking about the chocolate-covered candy here ;P Those little balls have a malty, crunchy filling with loads of air bubbles trapped and a chocolate coating – together it’s a really nice sweet snack. They are on the market since the late 1930s and were first marketed as “energy balls” or as a “lighter alternative to chocolate” and were primarily intended to appeal to women. Well… things change and I bet nobody will see them as a healthier alternative to chocolate ;P

    All the sugar, chocolate, and calories – in moderation all is fine. In these cookies, they provide the crunch and, of course, the malty flavor. Great combination! If you can hold yourself back and not eat five cookies at once, you should be absolutely fine – regarding the sugar, chocolate, and calories ;) My motto here – sharing is caring! All the cookies you share with others are not ending up in your belly ;P

    INGREDIENTS / ZUTATEN

    1/2 cup (120g) butter, melted
    3/4 cups (150g) brown sugar
    1 large egg
    1 tsp. vanilla extract
    1 1/3 cups (180g) all-purpose flour
    2 tbsp. cocoa powder
    1/2 tsp. baking soda
    1/2 tsp. salt
    5.3 oz. (150g) Malteser balls, chopped
    1.8 oz. (50g) semi-sweet chocolate, chopped

    (16 Cookies)

    120g Butter, geschmolzen
    150g brauner Zucker
    1 Ei (L)
    1 TL Vanille Extrakt
    180g Mehl (Type 550)
    2 EL Kakao
    1/2 TL Natron
    1/2 TL Salz
    150g Malteser, gehackt
    50g Zartbitterschokolade, gehackt

    DIRECTIONS / ZUBEREITUNG

    1. Melt the butter and let cool down a bit. Chop the Maltesers and chocolate coarsely and set aside.

    2. Add the brown sugar and melted butter to a large bowl and mix until light and fluffy. Add the egg and vanilla extract and mix well. Combine the flour with cocoa powder, baking soda, and salt and add to the bowl – mix until just combined. Add the chopped Maltesers and chocolate and fold in. Place the dough in the fridge for about 30 minutes.

    3. Preheat the oven to 360°F (180°C). Line a baking sheet with baking parchment. Use a cookie scoop or two tablespoons and place dough portions with enough space in between on the baking sheet – bake for about 11-12 minutes. Take out of the oven and let cool down on the baking sheet for some time, then transfer to a wire rack and let cool down completely. Repeat with the remaining dough.

    1. Die Butter schmelzen und wieder etwas abkühlen lassen. Die Malteser und Schokolade grob hacken. Zur Seite stellen.

    2. Zucker und geschmolzene Butter in einer großen Schüssel hell und luftig aufschlagen. Das Ei und den Vanille Extrakt dazugeben und gut unterrühren. Mehl mit Kakao, Natron und Salz vermischen und zur großen Schüssel dazugeben und kurz unterrühren. Gehackte Malteser und Schokolade dazugeben und unterheben. Den Teig für etwa 30 Minuten in den Kühlschrank stellen.

    3. Den Backofen auf 180°C (360°F) vorheizen. Ein Backblech mit Backpapier auslegen. Mit einem Cookie-/Eisportionierer oder zwei Esslöffeln Teig mit genügend Abstand auf das Blech setzen und für etwa 11-12 Minuten backen. Die Cookies aus dem Ofen holen und kurz auf dem Blech abkühlen lassen, dann auf ein Kuchengitter setzen und komplett auskühlen lassen. Mit dem restlichen Teig wiederholen.
