As already mentioned, these cookies here aren’t the »sexiest cookies alive« and you’ll never find them on the cover of People Magazine… but that doesn’t mean they aren’t delicious. Thanks to the applesauce in the cookie dough, the cookies are moist and stay that way for quite a while. Nobody likes dry cookies, right?! The streusels add a little crunch and make the cookies even better. Our cookies here aren’t particularly sweet – but you can easily change that with a little sugar icing drizzled on top. ;)

When preparing these cookies here, it’s good to have a round cookie cutter at hand. Not for cutting out the cookies, but to get the sprinkles where they need to be. And to keep them where they should be. If you simply place dough portions on the baking sheet and then sprinkle them with the streusels, they will go everywhere. When placing a cookie cutter snuggly around the cookie dough and then adding the streusels, the chances are much better they stay where you want them.
You prefer your cookies crunchier? Add some chopped nuts to the streusels before adding them on top of the cookie dough. Chopped walnuts or pecans work really well here. You don’t need much – a small handful should be enough. If you like nuts in cookies, add some to the cookie dough as well. They work well in this type of cookie.

One of our most popular cookie recipes is certainly our recipe for Double Chocolate Chip Cookies. They are simply perfect. Extremely chocolatey, moist, and crunchy at the same time. With a few flakes of sea salt on top – simply brilliant. Undoubtedly a baking recommendation when it comes to cookies.
INGREDIENTS / ZUTATEN

For the streusels:
3.5 oz. (100g) spelt flour*
2.1 oz. (60g) sugar
1/4 tsp. ground cinnamon
1 pinch of salt
1.8 oz. (50g) butter, at room temperature
1/2 tsp. vanilla extract*
For the cookies:
1/2 cup (120g) butter, at room temperature
1/2 cup (100g) brown sugar
1 large egg
1/2 cup (130g) applesauce (unsweetened)*
2 tsp. vanilla extract*
2 1/4 cup (290g) spelt flour*
1 tsp. baking powder
1 tsp. ground cinnamon
1/4 tsp. ground cardamom*
1/8 tsp. ground nutmeg*
1/8 tsp. salt
1 oz. (30g) walnuts, chopped
sugar glaze for decorations (optional)

60g Zucker
1/4 TL Zimt
1 Prise Salz
50g weiche Butter
1/2 TL Vanille Extrakt*

120g weiche Butter
100g brauner Zucker
1 Ei (L)
130g Apfelmus (ungesüßt)*
2 TL Vanille Extrakt*
290g Dinkelmehl (Type 630)*
1 TL Backpulver
1 TL Zimt
1/4 TL Kardamom*
1/8 TL Muskatnuss*
1/8 TL Salz
30g Walnüsse, gehackt
etwas Zuckerglasur für die Deko (optional)



DIRECTIONS / ZUBEREITUNG
1. Start with the streusels – combine spelt flour, sugar, cinnamon, and salt in a small bowl. Add the butter and vanilla extract. Rub everything between your fingers to create different-sized streusels. Place in the fridge until needed.
2. For the cookie dough, add the butter and brown sugar to a large bowl. Mix for several minutes until light and fluffy. Add the egg and mix until well combined. Next, add the apple sauce and vanilla extract and mix in. In a separate bowl, combine spelt flour, baking powder, cinnamon, cardamom, nutmeg, salt, and chopped nuts. Add the dry ingredients to the large bowl and fold in. Let the cookie dough sit at room temperature for about 10 minutes.
3. Preheat the oven to 180°C (350°F). Line a baking sheet with baking parchment and set aside.
4. Use a large cookie scoop* and place dough portions with enough space in between on the prepared baking sheet – you probably have to bake in two batches. Use a round cookie cutter* that is slightly larger than the dough portion and place it on the baking sheet so it sits snug around a dough. Add some streusels on top and press them slightly into the dough – the cookie cutter should keep everything in place. It’s ok if you lose some streusels when removing the cookie cutter. Do the same with every dough portion, then bake the cookies for about 15-16 minutes in the preheated oven. Take the cookies out of the oven and let them cool down for some time on the baking sheet, then transfer them to a wire rack and let them cool down completely. Repeat the process if you got leftover cookie dough and streusels.
5. Decorate the cooled applesauce cookies with sugar glaze to your liking (optional).
1. Mit den Streuseln starten – dazu Dinkelmehl, Zucker, Zimt und Salz in einer kleinen Schüssel vermengen. Die Butter in kleinen Stücken, sowie den Vanille Extrakt dazugeben und alles zwischen den Fingern verreiben, bis unterschiedlich große Streusel entstehen. Bis zur weiteren Verwendung in den Kühlschrank stellen.
2. Für den Cookieteig die Butter und den braunen Zucker in einer großen Schüssel hell und luftig aufschlagen. Das Ei dazugeben und gut unterrühren. Apfelmus und Vanille Extrakt dazugeben und ebenfalls unterrühren. In einer separaten Schüssel Dinkelmehl mit Backpulver, Zimt, Kardamom, Muskatnuss, Salz und gehackten Nüssen vermengen. Diese trockenen Zutaten zur großen Schüssel dazugeben und unterheben. Den Teig etwa 10 Minuten bei Raumtemperatur stehen lassen.
3. Den Ofen auf 180°C (350°F) Ober-/Unterhitze vorheizen. Ein Backblech mit Backpapier auslegen und zur Seite stellen.
4. Mit einem großen Keksportionierer* Teigportionen mit genügend Abstand zueinander auf das vorbereitete Blech setzen – man muss hier vermutlich in zwei Runden backen, da nicht alles auf einmal auf das Blech passen wird. Einen runden Keksausstecher*, der etwas größer als diese Teigportionen ist, so auf das Blech setzen, dass eine Teigportion damit umschlossen wird, dann Streusel auf dem Teig verteilen. Der Ausstecher sollte die Streusel an Ort und Stelle halten. Die Streusel leicht andrücken, dann den Ausstecher entfernen – wenn ein paar der Streusel herunterfallen, ist das OK. Mit allen Teigportionen ebenfalls so verfahren. Die Cookies im vorgeheizten Ofen für etwa 15-16 Minuten backen. Aus dem Ofen holen und kurz auf dem Blech abkühlen lassen, dann auf ein Kuchengitter setzen und komplett auskühlen lassen. Den Prozess mit verbliebenem Teig und Streuseln wiederholen, bis alles aufgebraucht ist.
5. Die abgekühlten Apfelmus Cookies nach Belieben noch mit Zuckerguss dekorieren (optional).
