Air Fryer Banana Quark Fritters

    Quark balls aka. Quark Fritters are a staple at almost every fair and street festival. Since these markets aren’t open year-round, you sometimes have to take matters into your own hands when you’re craving these little treats. If you have an Air Fryer, you don’t even need to heat up a deep fryer or anything like that. These delicious Air Fryer Banana Quark Fritters can be made in an Air Fryer without your kitchen smelling greasy for days. Really handy if you’re not a fan of the smell… ;P

    You probably won’t find banana quark fritters like these here at the fair – they tend to stick to the classic, neutral version at those markets. And that’s perfectly fine, since the fritters are delicious as they are. But why not try something new once in a while? If you like bananas, you’ll definitely like these banana quark fritters… maybe even love them! ;)

    We think that adding overripe bananas not only makes the quark fritters taste amazing, but it also gives them a wonderful texture. These little balls are wonderfully fluffy and don’t dry out as quickly. That’s a common benefit when you include fruit/veggies in baked goods. It almost always improves the texture! In the end, though, it doesn’t really make a big difference here whether the quark fritters stay moist for long… Let’s be honest, these little balls are always devoured so quickly that there’s no chance for them to dry out. ;P

    Normally, you’d use a deep fryer to make quark fritters. If you’re familiar with using a deep fryer or a pot with boiling hot oil and don’t mind the smells in your kitchen, you can, of course, deep-fry these banana quark balls here as well. It doesn’t make the fritters any worse, but it doesn’t necessarily make them better either. The flavor might benefit a little from deep-frying – fat and sugar are a great combination – but the fat also makes them a bit less healthy. We all know how it is…

    That’s the reason we prefer cooking a lot of stuff in an Air Fryer. The appliance is ready to use in no time, doesn’t need to be preheated for long, and »deep-fries« everything a bit healthier, completely without oil. Yes, strictly speaking, it’s not deep-frying. An Air Fryer only uses hot air, but because of its small cooking chamber and the direct, evenly distributed heat, it’s actually closer to a deep fryer than a convection oven. You wouldn’t get the same results with a convection oven…

    We have a fairly small Air Fryer from Zwilling* with 1400 watts and a capacity of about 4 liters – it’s quite small compared to other air fryers, but it’s perfectly adequate for these quark fritters here. You might have to do a few more batches to cook all the balls, but that’s fine. A batch of quark balls is ready in about 10 minutes. For everyone who likes to eat the fritters warm, it’s a good idea anyway to work in small batches so they are always hot, and they keep coming hot. ;P

    We don’t like to scrub the Air Fryer from top to bottom every time we use it – that’s why we recommend lining the basket with baking parchment. Just make sure the air can still circulate freely when using the paper. With the right size of baking parchment*, this isn’t a problem at all. We use something like that almost all the time… like I said, we prefer to clean as little as possible. ;P

    Anyway. If you prefer to do it the »old way« and deep-frying your fritters, you should check our traditional Quarkbällchen aka. Quark Balls recipe. They’re just like the ones you get at the fair. Perhaps a little fresher – without old, oft-used frying oil, and straight from the deep-fryer thrown into the sugar and then onto your plate. ;P

    Fancy something different? How about some Drop Donuts with Cherry Compote? A similar concept to quark fritters – just without quark and made with buttermilk instead. The delicious cherry compote perfectly complements this tasty treat!

    INGREDIENTS / ZUTATEN

    (about 15-16 quark fritters)

    2 cups (260g) all-purpose flour, plus a little more
    1/4 cup (50g) sugar
    3 tsp. baking powder
    1 medium (very ripe) banana, mashed
    8.8 oz. (250g) quark (20% fat)
    2 tsp. vanilla extract*
    1 large egg

    about 1.4 oz. (40g) butter, melted
    about 1/4 cup (50g) brown sugar
    some ground cinnamon

    (etwa 15-16 Quarkbällchen)

    260g Mehl (Type 405), plus etwas mehr

    3 TL Backpulver

    DIRECTIONS / ZUBEREITUNG

    1. Combine flour, sugar, and baking powder in a large bowl. In a separate bowl, mash the banana and then mix it with the quark, vanilla extract, and egg until smooth. Add these wet ingredients to the bowl with the flour and mix well. Let the dough sit for about 5 minutes, so the flour can absorb the moisture.

    2. Line the basket of an Air Fryer with baking parchment* and lightly grease the paper. If your Air Fryer needs to be preheated, preheat your device to 180°C (350°F).

    3. Prepare a small bowl with a little flour. Using a cookie scoop* (Ø 5cm) or a tablespoon, scoop out portions of dough, drop them briefly into the flour, and shape them into balls. Remove any excess flour. Place the balls in the basket, leaving enough space between them (we can fit five balls in our 4-liter basket) and bake them for about 10 minutes. Flip the quark fritters over halfway through the baking time to ensure they’re browned all over – be careful, they are very hot! The bottom of the balls will still be raw after the short baking time, but that’s okay.

    4. While the quark fritters are baking, melt the butter and mix the brown sugar with the ground cinnamon in a bowl. Remove the baked quark fritters from the Air Fryer, brush them with melted butter, and then roll them in the sugar and cinnamon mixture. Keep the fritters warm. Use the remaining dough to bake more fritters until everything is used.

    Note: The quark fritters are best when fresh and still a bit warm. If you like, you can serve them with some vanilla custard or sauce for dipping.

    1. Mehl, Zucker und Backpulver in einer großen Schüssel vermischen. In einer separaten Schüssel die Banane zerdrücken und dann mit Quark, Vanille Extrakt und das Ei glatt rühren. Diese Mischung zur Schüssel mit dem Mehl dazugeben und alles gut vermengen. Alles für etwa 5 Minuten stehen lassen, damit das Mehl die Feuchtigkeit gut aufnehmen kann.

    2. Den Korb eines AirFryers mit Backpapier* auslegen und das Papier leicht einfetten. Falls notwendig, das Gerät auf 180°C (350°F) vorheizen.

    3. Eine kleine Schüssel mit etwas Mehl bereitstellen. Mit einem Eisportionierer* (Ø 5cm) oder einem Esslöffel Teigportionen abstechen, diese kurz ins Mehl fallen lassen und dann zu Kugeln formen – überschüssiges Mehl entfernen. Die Kugeln mit genügend Abstand zueinander in den Korb setzen (bei uns passen fünf Kugeln in einen 4l Korb rein) und dann für etwa 10 Minuten backen. Die Quarkbällchen nach der Hälfte der Zeit einmal wenden (Vorsicht, heiß!), damit sie rundum gebräunt werden. An der Unterseite werden die Bällchen nach der kurzen Backzeit noch roh sein, aber das ist ok.

    4. Während die Quarkbällchen backen, die Butter schmelzen und den braunen Zucker in einer Schüssel mit dem Zimt vermischen. Die gebackenen Quarkbällchen aus dem AirFryer nehmen, mit geschmolzener Butter bestreichen und dann in der Zucker-Zimt-Mischung wälzen. Die Bällchen warm halten. Mit dem verbliebenen Teig weitere Quarkbällchen backen, bis alles aufgebraucht ist.

    Hinweis: Die Quarkbällchen sind frisch und noch etwas warm am leckersten. Wer mag, kann noch etwas Vanillesoße zum Dippen dazu reichen.

    There is much more you can do with an Air Fryer than just fries… these Air Fryer Banana Quark Fritters are a sweet treat everybody loves in our family!


    Ingredients

    Scale
