Quarkbällchen aka. Quark balls are a sweet snack you can find at pretty much every German Christmas market (or similar events). These small deep-fried dough balls are very popular with young and old alike. No wonder – pretty much everything you deep-fry and roll in sugar afterward tastes delicious. It’s not my fault. It’s a fact ;P If you want to make Simple Quarkbällchen at home, just like the ones from the markets, you don’t need a big deep fryer. A simple small pot/saucepan will do the job just as well…
Even though I love Quarkbällchen and all the other deep-fried sweet snacks out there a lot – I have to admit that I don’t make them at home very often. I don’t have a problem working with a pot full of boiling hot fat, but the smell in the kitchen afterward is not really something I like. Whenever I have to »deep-fry« something I normally reach for my AirFryer. I know, it’s not the same, of course, but whenever I crave some french fries, this is the device I use instead of a pot with hot fat or oil. Easier to handle and pretty much odor-free ;P
Unfortunately, an AirFryer is not an option for Quarkbällchen like these here. They need to take a swim in hot fat or oil. You will never get a good result in any other device – no matter how fancy it might be. These balls need to swim in fat ;P
Fortunately, quark balls are quite quick and easy to make. The batter/dough is done in no time at all. Deep-frying does not take much longer to be honest. If you leave all the windows in your kitchen wide open when deep-frying the balls, the fatty smell is only half as bad. You might want to do them on a day without stormy and rainy weather though. Then you can leave the windows open without flooding the kitchen ;P
Anyway. Deep-frying is easier than most people think. Just be careful when handling a pot full of boiling hot fat! Keep small kids out of the kitchen. Those are normally more dangerous than the pot with fat ;P

INGREDIENTS / ZUTATEN
(about 14 balls)
2 cups (260g) all-purpose flour
3 tsp. baking powder
1/2 cup (100g) sugar
9 oz. (250g) quark (20% fat)
3 medium eggs
2 tsp. vanilla extract
fat/oil for frying
1/3 cup (70g) sugar
1 tbsp. vanilla sugar
(etwa 14 Bällchen)
260g Weizenmehl (Type 405)
3 TL Backpulver
100g Zucker
250g Speisequark (20% Fett)
3 Eier (M)
2 TL Vanille Extrakt
Fett oder Öl zum Frittieren
70g Zucker
1 EL Vanille Zucker
DIRECTIONS / ZUBEREITUNG
1. Mix the flour, baking powder, and sugar in a large bowl. Mix the quark with the eggs and vanilla extract in a separate bowl until smooth. Add this mixture to the bowl with the flour and mix until well combined. The dough will be wet and sticky. Let the dough rest for about 10 minutes – this will help the flour to absorb some moisture.
2. While the dough rests, heat up frying fat/oil in a small saucepan to a temperature of about 350°F (180°C). Make sure there is enough fat/oil in the saucepan, so the dough can swim freely.
3. Use an ice cream scoop* (Ø 2 inches) to scoop out dough and then carefully drop it into the hot fat/oil. Do not fry too many dough portions at once so the temperature of the fat/oil does not drop too much. Deep-fry the quark balls until golden brown (it takes about 4-6 minutes). Remove the deep-fried balls from the fat/oil at and place them on several layers of kitchen paper so they can drain.
4. Mix sugar and vanilla sugar in a small bowl. Roll the still-hot quark balls in the mixture. Serve the quark balls slightly warm.
1. Mehl, Backpulver und Zucker in einer großen Schüssel vermischen. In einer separaten Schüssel den Quark mit den Eiern und dem Vanille Extrakt glatt rühren, dann diese Mischung zur Schüssel mit dem Mehl dazugeben und alles gut vermengen. Der Teig wird sehr feucht und klebrig sein. Für etwa 10 Minuten stehen lassen, damit das Mehl die Feuchtigkeit gut aufnehmen kann.
2. Während der Teig ruht, einen kleinen Topf mit Frittierfett oder Öl auf etwa 180°C (350°F) erhitzen. Es sollte so viel Fett/Öl im Topf sein, dass die Quarkbällchen frei schwimmen können.
3. Mit einem Eisportionierer* (Ø 5cm) Teig abstechen und dann vorsichtig ins heiße Fett/Öl fallen lassen. Nicht zu viele Teigportionen auf einmal frittieren, damit die Temperatur des Fetts/Öls nicht zu stark fällt. Die Quarkbällchen goldbraun ausbacken (dauert etwa 4-6 Minuten). Die fertigen Bällchen aus dem Fett fischen und auf mehreren Lagen Küchenpapier abtropfen lassen.
4. Zucker und Vanillezucker in einer kleinen Schüssel vermischen und die noch heißen Quarkbällchen darin wälzen. Die Bällchen nach Möglichkeit noch leicht warm servieren.
