Today I have a guest on my blog helping me out with the Cookie Friday! Yay! I could tell you all sorts of things about my guest, of course, but I think I’ll just let her take the wheel herself… After all, there’s no point in creating more work for myself than necessary. Right?!

Hello dear bake to the roots readers,
I am Sarah from the blog Knusperstübchen. I am blogging mainly in German, however, I provide recipes also in English if explicitly wanted. I have stayed a couple of years in America and Ireland and came back with a whole bunch of great recipes that needed to be shared. On my blog I am now sharing these recipes and of course other favorites my family, friends and I love. These brownie peanut butter cookies are definitely a must bake and I am very happy to share the recipe today with you. Thank you, Marc, for having me.
The cookies are very easy to bake. You just need some cocoa and chocolate and you are almost ready to go. They totally remind me of brownies as they are soft and fudgy inside but then again they are as crunchy on the outside as cookies should be. As I love the combination of chocolate and peanut butter (who does not?!) I put some peanut butter mixture on top. Holy moly if you looove reese’s peanut butter cups you will definitely love this little treat. Now, let’s bake and enjoy your cookies.

INGREDIENTS / ZUTATEN
For the dough:
8 oz. (225g) semi-sweet chocolate*
1 oz. (30g) butter
2 medium eggs
1/2 cup (100g) brown sugar*
1/3 cup (60g) sugar (fine)*
(60g) all-purpose flour*
1/4 tsp. baking powder
1 pinch of salt
1/2 tsp. Vanille Extrakt*
2.6 oz. (75g) milk chocolate*, chopped
Additionally:
4 tbsp. peanut butter*
1 cup (120g) confectioners’ sugar*
1 tbsp. butter, softened
some melted chocolate for decorations (optional)
Für den Teig:
225g Zartbitterschokolade*
30g Butter
2 Eier (M)
100g brauner Zucker*
60g Zucker (fein)*
60g Mehl (Type 405)*
1/4 TL Backpulver
1 Prise Salz
1/2 TL Vanille Extrakt*
75g Vollmilchschokolade*, gehackt
Außerdem:
4 EL Erdnussbutter*
120g Puderzucker*
1 EL weiche Butter
etwas geschmolzene Schokolade für die Dekoration (optional)


DIRECTIONS / ZUBEREITUNG
1. Preheat the oven to 180°C (350°F). Line a baking sheet with baking parchment and set aside.
2. Melt semi-sweet chocolate and butter for the cookie dough and let cool down slightly. Now beat eggs and both sugars until light and fluffy. While whisking add the chocolate-butter mixture. Combine flour, baking powder, and salt. Add this together with the vanilla to the bowl and mix in. Chop the milk chocolate and fold it into the dough. Place the dough with a tablespoon onto the baking sheet, leave some space in between.
3. Now whisk together peanut butter, confectioners’ sugar and the soft butter and add some of the mixture onto each portion of cookie dough (in the middle). Bake the cookies for about 10 minutes. Leave to cool, sprinkle with melted chocolate (optional) and serve.
1. Ofen auf 180°C (350°F) Ober-/Unterhitze vorheizen. Ein Backblech mit Backpapier auslegen und zur Seite stellen.
2. Die Schokolade und die Butter für den Teig schmelzen und dann leicht abkühlen lassen. Eier und Zucker zusammen aufschlagen, bis die Masse sehr hell wird, dann unter ständigem Rühren die Schoko-Butter-Masse unterrühren. Mehl, Backpulver und Salz vermengen und zusammen mit der Vanille in die Eier-Schoko-Masse rühren. Die Milchschokolade grob hacken und unterheben. Den Teig etwa esslöffelgroß auf das vorbereitete Blech mit etwas Abstand verteilen.
3. Erdnussbutter, Puderzucker und Butter cremig rühren und mit einem Teelöffel jeweils einen »Klecks« in die Mitte des Cookie-Teigs geben. Die Cookies etwa 10 Minuten backen. Abkühlen lassen, nach Belieben mit geschmolzener Schokolade dekorieren (optional) und servieren.

Habe die Cookies eben aus dem Ofen geholt und Sie duften wunderbar.
Ich hatte nur mit dem Teig Probleme, der war sehr flüssig, müsste dann Mehl nachschütten.
Auch wurde meine Erdnussbutter Gemisch nicht flüssig, sondern mehr bröselig wie Streusel, aber dieses stört nicht, schmeckt so lecker.
Geschmacklich sind sie top.
